That round flaky bread is Bacolod's famous pastry/delicacy called Piaya. They sell this outside of the schools in Bacolod and cook there on the spot sold for snacking. Butterscotch of Iloilo was made known by Iloilo's Biscocho house located in Jaro, iloilo city and the rest just followed. Biscocho is toasted bread with sugar or milk on top which is also one of their famous pastry whixh you can find in this bakery. The toasted bread with milk on top was made known by Wewins bakeshop also in Iloilo.

The flat flaky bread is called Piyaya it is famous sweet bread of Ilokos region made with muscovado sugar ( it’s a brown sugar the first strain of sugar from the cane ) it is bit healthier than white processed sugar. This delicacy has been for hundred of years already. I’m glad you are liking the local specialty, Filipino foods and living in the Philippines. I just came across your blog and your family is really adapting well in the Philippines. I miss my country I’m US - Texas based and never been home for a long time, so I enjoy blogs like yours.

Piaya its not from Ilocos region it actually originated in Negros occidental Bacolod city.,the sugar capital of the philippines,.Piaya is made from muscavodo sugar but there other flavors too like ube and mango..Bongbongs Piaya is the most popular brand from Bacolod city Negros Occidental

Piaya originated from Negros Occidental. It is an unleavened flatbread filled with muscovado sugar. Negros is known for sugarcane. The largest sugarcane areas are in Negros. It's not surprising that they created a delicacy like that.

the fillings are either ube or muscovado sugar (from sugar cane - Muscovado sugar may be slightly better for you than white sugar because of its minerals and antioxidant properties, but it's still an added sugar. Your body digests these more quickly than the natural sugar in fruits that also has fiber and minerals)...
