Mix cream cheese, butter and milk over hot water bath (low heat) for 3 mins or until smooth. 2. Add in egg yolks and mix well until fully combined. 3. Sieve in flour and corn starch over hot water bath (low heat), mixed until thickened (~3 mins & ~60-65°C). Add in vanilla extract. Keep the hot water. 4. In a separate bowl, mix egg white and cream of tartar with electric hand whisk, medium speed. 5. After it became foamy, add in sugar in three lots. Whisk until soft peak. 6. Fold egg white mixture into the egg yolk mixture in two goes. The mixture should leave a ribbon trail. 7. Pour the mixture into a 6” cake tin lined with baking paper. Wrap the outside of the cake tin with kitchen foil and semi submerge it in a large tin with the hot water from step 3. 8. Bake it at 130°C for 1 hour, then grill it (20cm from the grill) until the top is reddish brown in colour.

9. after gaining the right color on top, turn off the oven, leave it for 5 minutes then take it out, immediately unwrap the cake, serve either hot or cold.
Love this cake, while lived in Japan, we got the cake weekly, they called it Soufflé cheese cake (スフレチーズケーキ) in Japan or Japanese cotton cheese cake, you could follow any recipe in Japanese without much difficulty
