The most important part of any sushi chef's arsenal are the knives. Not only is a sharp knife able to do everything you need it to do, a sharp knife is a safe knife. But most importantly, sushi chefs need a very sharp knife to create edible art from fish and vegetables. Of course skills is also important which comes with time and practice but it all comes back to having the sharpest knife possible. Can your knife do what I did in this video? I would love to see any close results!
I have been using the Minonokuni Matsu-1573 210mm Yanagi. Super Blue Steel. This can also be used for breaking down whole fish and chicken. But normally for slicing, sashimi, vegetables, meat etc.. This is my custom specked knife which I have been using for more than 8 years.

About Master Sushi Chef Hiroyuki Terada:
Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on KZbin.
At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine. Terada earned the title Master Sushi Chef by becoming the standing head sushi chef & can serve Fugu (Japan Licensed) to the public.

Yeah, bur Hiro keeps his basic knives extremely sharp. That said, l think even with a mediocre knife edge, he could probably show most of us up in cutting skills.

I have a really cheap knife but because the blade is very thin it holds a ridiculously sharp edge. I got it from an Asian market and it’s the best knife I’ve ever bought. Cost me 16.95$ and it’s better than knives I’ve spent over 100$ on.

Is heavy knife 🔪 bad or ok to use or is your knife heavy. Because if it’s heavy or not matter. Also is your knife a bite heavy for guud slicing like that?

All my knives can! Even the cheapest knife in my collection which was $25 can do that (though, I do have to sharpen that knife on a whetstone often).

Now that is the kind of knife I have wanted. My Japanese-style (Dalstrong Shogun series) 8-in chef's knife isn't horrible by any stretch, but there's always a feeling that something's missing.

I use some of the same knives as you, HIro. I have the Masahiro Gyuto and the Kikuichi Sujhiki, both for daily use. I also use Blue Steel Yanagis and Debas in addition to other Japanese steel blades. I regularly sharpen all with whetstones and, while I am not nearly as fast as Hiro, I can slice a ripe tomato or green onions less than 1mm thick. I slice usuzukuri so thin that the plate shows through. I may be a home cook, but my sashimi plates are restaurant quality.

This is so stupid. Tomatoes ripeness varies hugely and a blade that was sharpened on really high grits can sometimes struggle more on a tomato that a duller knife.
