I have a big soft spot for older felines like Gracie who I just found out is 16 yrs old or older now in 2020. I pray she is still with you here on earth in 2020. She is a dollbaby for sure. I have a 20 or 21 year old kitty named "Blacknose." He lost his eye 12 years ago by some horrible person that shot him in his little eye. He made it through the surgery but lost his eye. He loves life & has continued on living his best life in 2020. God bless all the animals in the world & you Mandy, & your sweet family.

On the chicken recipe, I tried a similar recipe but, with the parmesan cheese, mix one package dry Italian dressing mix and some garlic powder. Coat chicken with egg mixture then shake chicken in a bag with the other ingredients. It is really good.

I made the hash brown casserole tonight, but I used hamburger meat, cream of potato, cream of mushroom, sour cream, stirred into the hash browns, and covered with cheese and baked. It was delicious.

I make something simular. I just bake the chicken (no over baking tho). Meanwhile cook veggies in a pan with olive oil or butter and prepare sauce. My secret sauce (reveal)😜 1 cup soy sauce, 1 cup chicken broth, 2 small garlic cloves, 1/4 cup brown sugar (I use spends brown sugar), bring to a light boil add 3 tbs cornstarch slurry, +1tbs corn starch slurry if needed. Stir constantly. Add Red Pepper flakes, the more flakes, the hotter sauce will be.spicy would be about 1 teaspoon. Stir for about a minute and remove from heat. Cut chicken into bit size, add it to veggies, add sauce and cover on warm for 10 minutes. Serve over white rice.

If I am making hashbrown casserole for brunch I top it with crushed corn flakes mixed with a bit of melted butter. If it's for dinner I use panko bread crumbs instead. I also the frozen shredded hashbrowns are hard to find here so I use the cubed ones instead.

In Utah we call those potatoes “funeral potatoes”. But also with crushed corn flakes mixed with butter then sprinkle it over the top.

Try the green beans like that (bacon & grease) but called 'shelly' beans, the canned green beans with pinto beans added!! yum

That potato casserole is yummy with diced ham or sausage added. Makes it a whole meal if you toss in a cup or so of frozen peas too. Easy and delish!

If you bake your meatballs, they’ll cook better and shouldn’t break apart. They also won’t need to be in the crockpot more than an hour, or you could actually let them cook completely in the oven, then just simmer in a pot with the sauce on top of the stove for an hour or so on medium low. It’ll keep your kitchen cooler, too.
