@Christy Rouse - Hey Christy!! Thanks so much for stopping by again this week and watching! Girl, I'm all about some potato soup! I have made crockpot versions, stovetop versions (and my favorite stovetop recipe is already on our website and has been in many weekly videos over the years), but I do really like this IP version. I've made this one once before and what I love about it is using the steamer basket up over the liquid to cook the potatoes, they don't get as mushy. Hey guys! Everything looks great, especially the hamburger patties with gravy, yum! I never think of doing those, but I definitely should. And potato soup is my favorite! RIP old microwave. Tim the handyman is on-duty, ha! Glad they had your model in stock. 👍🏻

I feel like we share an Asian and Tex-Mex meal almost every week, because those truly are our favorite cuisines, and they are so versatile and easy to switch up at home. Mexican is definitely Tim's jam, haha! Believe me, I know how incredibly lucky and blessed I am to have Tim, not only for his handyman skills, but a thousand other reasons 💖💗 I've often joked with him (more serious than he imagines) that if something happens and he is no longer here, I"ll have to move asap. I won't be able to change a light bulb, fix the tv remote, do anything at all without calling someone to help. He is truly very talented and very willing to do things, even if he's never tried them before. I am so incredibly lucky! Thank you so much for stopping back by and watching, and for commenting! 😋 I'm a soup loving girl, even in the hot summer months, but my sweet husband tends to really only like soup if it's cold outside. I keep trying to reason with him... but most of the other food I prepare is hot, I don't see the difference? However, he really is not a soup in the summer fan, LOL!! I'm so incredibly grateful and blessed that he will pretty much eat whatever I prepare, and is always kind and complimentary (and honest!) in his feedback. So blessed!! You and Tim are definitely on the same page - he is not fond of soup in the summer months, but much prefers it in the winter. To me, most everything I cook is hot, so it's no different than hamburger steak or pork chops or burgers/steaks from the grill - it's all hot! Oh that potato soup!!! We had steaks today, it's my birthday, I am officially 43. My hubs brought home the chocolaty-est cake ever from Rouses and I spent the day watching TV with my kids lol.

I purchased an air fryer and have cooked several things in it with your air fryer conversion chart. Why have I not bought one before!!! Did some frozen breaded chicken patties and some hot dogs and some frozen grilled chicken tenders and they crisped up so well and didn’t heat up the kitchen!! Only purchased a small one and it’s the perfect size for empty nesters!!!!!

There's a little bit of stress/guilt over having a channel like this, because I always worry a little that something we like, a recipe we tried, an appliance we bought, a product we tried, is something we like and I help "convince" someone else to try it and they totally do NOT like it. I always feel just a wee bit of responsibility in that. Therefore - I'm so glad to hear you like your air fryer, because we continue to love and use ours! Our Instant Pot is stashed in a cabinet, but our air fryer has earned a coveted spot out on our countertop because we use it so often. For all of the things you mentioned, and many many MANY more!! I think as you begin to watch some of our content, you will definitely notice that I am a total spice wimp, while my sweet husband Tim loves any and all things spicy, LOL! The trick for me is to find recipes to try that allow me to be able to eat flavorful food, while still allowing him to add more spice (by adding extra hot sauce, sriracha, chili flake, jalapenos, etc). It's finding that balance that is most important to me :) I do treasure him, and know how incredibly blessed I am!! My grandma's potato soup was always my favorite and nobody makes it like her. Potatoes, butter, water, milk, white onion, salt and pepper. That's it.

It all looks so good, I think soup and salad is ALWAYS a good idea! I did make salisbury steak/hamburger steak patties recently but you know me and I used ground turkey because that's how I roll, ha! I love those black bean enchiladas & haven't made them in a long time, thanks for the reminder on those and I will add them soon. Haven't thought to put them in the west bend, good idea. There's 2 of my grand kiddos! Boy that's a lot of chicken strips, I know they all loved that and I've still never tried Raising Cane's, ack. It was fun to see them, know y'all had fun too. @Barbara Winslow - Hugs to you Barbara. I know you must be grieving so, and please know that we are praying for peace and comfort to you, after your loss of your precious David. I have often told Tim that I will be totally helpless if something happens to him any time soon. I can barely change a light bulb or get a tv to come on at this point, he has everything so ordered and smart and setup all tech-y around our house, and he takes care of all of it. LOL, Raising Canes and Zaxby's are both fairly close to us, and they are both "just" chicken strip places, though they are decent and we do patronize both. My niece made a special request last summer when they came to visit and asked for that, so I made a special trip to get that for her :) Raising Canes only does fried chicken, with the Texas Toast, fries, slaw and their sauce, while Zaxby's does do grilled chicken, and they have a larger menu that includes salads. Hello my sweet friend. Looks like you had a wonderful and blessed week and had family visit too. I enjoyed this video. I call those Salsbury steaks but that is just me. Lol. I make them once a month or so. I make it ground beef but it is getting so expensive. Well beef in general, all of it is. We love tacos. We do tacos of Fridays. We have been doing Taco Fridays since my kids were small. They are now 19 and 22. It was even before Taco Tuesday was a "thing." That potato soup looks so delicious. Potato, cheese, bacon...what is there not to like about this. The microwave broke with family over! Yikes. Isnt that how it always happens! Gotta laugh at it because on Friday our AC blower motor went out. My kids were not happy and I just had to laugh at God's sense of humor. The feel like was 106° when it went out. Praise the Lord we got it fixed that night and we were without AC for only about 5 hours. Hope you and Tim have a fantastic and blessed week. Stay cool. Southeast Texas is hot. 😓

Girl, I cannot believe your AC was broken in this kind of heat! Yikes! I'm a firm believer that they only seem to go out when it gets the hottest (it happened to us many years ago and we spent a few days in an oven of a house before we could get someone out with a whole new unit). Tim's mom makes the BEST chicken and dumplings, hands down, they are a big family favorite. Mine will never be as good as hers, so I don't make them too often, LOL! That being said, we've shared a video showing a really easy way to make a big pot of chicken and dumplings in the Instant Pot, and I do make those for Tim (usually in the fall or winter). So good!! We got our 1st Microwave when I was in 7th grade. My father just replaced it when I was 45!!! That one lasted 2 years, caught fire. He paid a pretty penny for it too! I went to Walmart picked up a GE $69.00 nice looking stainless one for him. It is going on almost 4 years now. Years ago I believe you "got what you paid for" as far as appliances. My motto now is go for the cheaper or mid-grade. They all die before the 10 year mark!

The older I've gotten, the more I sound like my mother who used to say "they don't make things like they used to", LOL! However, I totally think it's true and have seen it, much like your microwave your family had, over and over again. Things are meant to be short term only, consumed, discarded and the consumer driven society that we are, just purchased again. I"m with you, on all counts! I was so glad that the microwave that we needed for our wall mount was both in stock, and not overly expensive. @Sarah Lane - Hi Sarah! Thanks so much for stopping by this week! Potato and leek soup will be very similar, we just use a different kind of onion rather than a leek. I bet yours is amazing! Tim likes to have meat in his food, so I often add chopped bacon, ham or even ground meat that I've browned separately on the stovetop. We love potatoes around our house, any which way, LOL!! Reading another one of my mysteries, set in Ireland, this time we are in County Cork, LOL!! Thinking of you as I sip my tea and read my book, haha!! @@sarahlane9121 - my goodness Sarah, you must be a night owl! It has to be late there, if I'm doing the time change correctly! Craic comes up fairly often in the dialogue, and I love it! (Thanks for the pronunciation, I wasn't sounding out crack in my head but more like crake, rhymes with brake, so thanks for that!) Since I'm such a food-oriented person, I notice the repeated references to brown bread, curried chips, and a cuppa :) I've actually been drinking a wee bit more tea since I have been reading this series (though the green tea I drink is, I'm sure, an anathema to any self-respecting Irishman, LOL!!). This morning when I was reading over breakfast, there were several "eejits" and one spot in my book where they grabbed a piece of paper and a "biro", which I'm assuming is a pen?! I definitely love it and the descriptions are amazing. The countryside sounds breathtaking and County Cork in particular, where most of the mysteries are set, sounds truly lovely 💖

The Instant Pot (to me) is great for things like cooking dried beans, cooking big cuts of meat like a roast or racks of ribs, and for soups! One of my most favorite things to make in the IP, oddly enough, is a small batch of potato salad! I can put in 2 cut up russet potatoes, 2 washed raw eggs, cook 4 minutes, then QR and put the eggs in an ice bath while I chop up the potatoes with seasonings, mayo, pickles etc. I only mess up the one IP liner, never have to worry about the starchy potatoes boiling over on the stove, and often put in a couple of extra eggs, and then make egg salad or chicken salad for my lunches :) We shared this idea in a "3 new experiments" video here - kzbin.info/www/bejne/moGpaGOoeqiCiac. I have made so many potato soups over the years (crockpot, stovetop and now a couple of times in the IP). We love potato soup, and I would eat it year round (Tim is not a fan except when it's cold outside). As for the small West Bend slow cooker, that is an incredibly sentimental thing for me. My sweet mama had one and gave that one to me about 23-24 years ago, and I worry every time I get it out to use it that it won't work. It's still going strong though, and it reminds me of her every time I use it (she's been gone 19 years now). For a long time, you could order one that looked exactly like that from Amazon, but then I read that West Bend had discontinued making them. Several subscribers have said that they have successfully found them at thrift stores like Goodwill or at yard sales. I have found a newer one on Amazon that is similar, so if this one ever stops working (knock on wood), I will try to replace with a newer one. I have a few things of my momma (momma went to heaven 17 years) whenever I cook with them the food seams to taste better lol. I have her stock pot it has to be 60 years old very well used, but still works. I make your tuna patties all the time my sister likes so much better than salmon patties,they are so good yummy. I'm going to give the potato soup in the instant pot a try wish me luck hahaha not real comfortable yet with the pot. Thank you soooooo much for your videos I'm learning a lot. I also think things cooked in them has that extra special dose of love and you can taste it in the food, LOL! How lovely to have her stock pot, that's awesome! Hooray, I'm so glad to hear that you have tried the tuna patties and you guys like them, that totally makes my day! I like them too, even though I grew up eating salmon patties (or salmon croquettes, as my mama called them). Hi Stacy and Handy Man, Tim! We are having potato soup this week too but yours looks much better than ours lol And the salad that went with it looked delicious too!! We don’t have Cane’s chicken here but we have always wanted to try it. We almost went to one in Kentucky last Summer when we went to The Ark Exhibit but we had our big family with us and they weren’t doing indoor dining so we ended up at Chick Fil A. Maybe there is a Canes in Phoenix? I’m going to check right now. 😊 Sorry about your microwave but I’m glad you got a new one and it works!! I hope you guys had a wonderful weekend! ❤️

@Logues Life - Hey Krista! Thank you so much for taking some of your precious time out of your day/evening and stopping by to watch! I honestly do not know how you do everything you do, and still find time to sleep, LOL!! I bet your potato soup was good! You can always spice it up with whatever you like seasoning wise, and add cheese, bacon, etc and load up on the unhealthy stuff to make it taste better, LOL! I bet it was really good though :) Raising Canes and Zaxby's are just chicken strip places. They are fine, but one of our nieces/nephews really loves them, and requested them last year, so I was doing my level best to make them happy and get what they like. We don't get to see them as often as we would like, so I try to do everything I can to make their stay a happy and joyful one :) I bet there's lots of great places to eat in Phoenix and know y'all are excited! It's going to be hot though! We were under a heat advisory all weekend, it was way past stinking hot, it was oppressive and miserable. I am hibernating inside as much as humanly possible, LOL!! The soup looked so good. I have everything but the cream to make it. Do you think it would be ok with 2% milk? So glad that Tim was able to replace the microwave! Mine is above my stove and went out. @Angie Cantrill - Hi Angie!! Thank you so much for stopping by this week and watching! Girl, you can pretty much make potato soup from any combination of potatoes, veggies, milk and cheese. I find it's one of the most versatile things I've ever tried to cook. I've done crockpot versions, stovetop versions and now a couple of IP versions. I have used skim, 1 or 2% milk, half and half and even canned evaporated milk. Sometimes I add bacon, sometimes I add browned hamburger or diced ham. I think you can totally make it with 2% milk. The main thing that I have found is that if you use a milk product with a lower fat content, it will just be a bit thinner. You could do lots of things to remedy that, like adding a cornstarch slurry, maybe even toss in a few instant potato flakes (which I have never personally tried but know lots of people who have), you could mash a few of the potatoes well to create a thicker consistency. If you're ok with it a bit thin, just go for it with the regular 2%. Oh, and I hope you get a friend or handy person in soon to help you get your microwave replaced above your stove. @sashamean1 - Chicken and dumplings are a family favorite at our house, for sure! Tim's mom makes the BEST chicken and dumplings we have ever had, hands down, and mine pale in comparison. He and his brothers have wonderful memories of both his grandmother and mom making huge pots of chicken and dumplings for family get togethers and holidays. The amount they make feeds an army, and is way too much for the two of us. However, a couple of years ago I found a quick and easy recipe to make them in the Instant Pot, and we have shared a video on that on our channel. Instant Pots are so popular right now! We got one a couple of years ago, so that we could try out the latest new gadget and hopefully share some recipes with our subscribers. My mama owned an old-fashioned pressure cooker that was on the stove and I remember it "blowing up" one time when I was young and it scared me to death! These are very safe, they have safety features built in and are actually quite easy to use. I was very nervous the first couple of times I tried it, but it's second nature now and actually not hard at all. I must say though, I much prefer my air fryer and I love my crockpots (I have 3 of them!). So when your situation changes and you have more room, I would definitely vote for a small crockpot. @@LetsCookYall I am definitely not adventurous in the kitchen lol. My poor sweet mom used to try and teach me so many things and I didn’t want anything to do with cooking. She recently passed away and now I’m regretting things a little bit. Bummer is, now that I’m wanting to cook.. I can’t :(. But I’m saving up recipes and collecting appliances in the meantime. :) I will definitely get a crockpot. I have an air fryer and I love it. :) I cook in my bedroom. But hey, it works! @@iprefersteve - girl, you sound just like me! When I was younger, I could care less about cooking. Even when we first got married, I was busy working full time and barely did much of anything, it was just easier for us to eat out or pick up take out on the way home. But, I soon realized how expensive that was and started learning to cook. By the time I really got into it, my mom was sick and then passed away (it's been 19 years now and I still miss her every day). I've learned a lot over the years, mostly from watching Food Network and cooking shows, and from reading cookbooks, and mostly - by trial and error. I learn more from my mistakes than I do my successes, LOL!! We hope to help others and inspire them to cook things at home, so I'm so glad you are here and hoping that will help you (now or later). Hooray for an air fryer -- it's definitely my favorite thing lately. Just a small contained oven, but it is so great when cooking for one or two!! Have a fantastic day Carlyn!!! 💜💖

@@LetsCookYall Losing my mom was the worst thing that I have ever and will ever go through. It’s so weird how things change when you lose your best friend. I could love okay on what I have been doing.. But I just crave good home cooked meals.. and yep. I can’t eat out every day. It’s just me and my little income lol. So I just have to be patient and get things ready for when I can finally start the next phase of my life. I really do appreciate that you and so many others share all these meals. I would be completely lost otherwise. :)

You learn to live with the grief, and for me, my faith sustains me day to day, knowing that she is safe in the arms of Jesus, waiting on me to spend eternity with her, praising God Almighty. I hope you share that faith, and that it gets easier over time for you, with missing her. Patience is tough, but almost always worthwhile in the end - hope your progress is swift and your new situation better soon. Hang in there!!

It looks and sounds like you had a wonderful week. Everything looked delicious. Pizza Hut is our favorite pizza but ours closed during the Pandemic. So we have only had a Dominos and Papa Johns in our town. We are getting a Giovanni's in the Pizza Hut building starting August 30th. They are a chain out of West Va I think so hopefully they are good. They were building a Captain D's when the Pandemic hit and then it never opened so we have a brand new building sitting empty. We have mostly fast food in our little town and Mexican restaurants. The only nicer restaurant we have is a steak house. Our Chinese are both nasty so we actually have to go to Louisville if we want to go out to dinner. It's not horrible, but about a 30 minute drive. We do not eat out real often due to Mark's work schedule. We can only go on Friday or Saturday evening's. It looks like you enjoyed seeing family.. We have several upcoming events. My niece is getting married Oct 2nd so we have a wedding shower for her on Aug 7th. Then Hayley's baby shower is August 14th. The baby is due Sept 11th but they will induce if she does not deliver before the 10th. My moms 80th birthday is the 15th so we are having a surprise party on the 18th so things are about to get busy. Due to the Pandemic we cannot visit the hospital or be there when the baby is born. Only she and Justin can be at the hospital. She has to stay 2 nights for a regular delivery and 3 nights if she needs a C-section so the baby will be several days old before we get to meet him. Take care and try to stay cool. It is very hot here. 90s for the next several weeks. Thank goodness for Air Conditioning. I plan very little cooking. I am going to bake 1/2 a ham for easy dinners.
