a few years late , but I find cake tester is a must for checking internally temps for delicate fried items, fish or doness of veggiew like beets or carrots. offset comes in handy ,

Very similar to yours. I carry a 10 inch slicer as we do alot of whole tenderloins, prime rib and smoked brisket. Also a dough scraper, and a Leatherman for tightening all the screws and bolts that always come loose on our ancient smoker, slicers ect. Keeps us from calling Hobart constantly.
