Meat from a pig's head (ears, and face). What is so special about that? To be fair, if they are really using such meat then it is interested. However, if sisig has an egg or mayonaise, it most likely fried minced pork. Instead of grilled meat from a pigs face.

Originally, Sisig doesn’t have eggs or mayonnaise. But many places here in the Philippines mix and match dishes which is good to taste.
