We share our plans for preserving 50 lbs of yellow onions Jim picked up at the Restaurant Store. We will be storing some as fresh onions, and dehydrating or freeze drying the rest.

I use panty hose to store onions. I fill the legs one onion at a time while tying a knot between each onion. Therefore, none are touching another onion. When I use one, I take the one beginning at the toe, cut it away below the knot. The whole thing hangs in my pantry perfectly.

That is how I do mine or I braid them and cut away just at the top of the bottom onion.

We recycle the plastic mesh bags from turkeys and hams, also mesh avocado bags for hanging onions. 😂

I live in a huge onion growing area in SW Idaho. There are 3 onion processing plants within 4 miles of my house and onion fields all around. I was able to glean over 200 pounds of onions from a farmer’s field a mile down the road. It took me about 2 hours, but they were free. You can imagine how fast I clicked on this video! 😂

Excited for you! What a great deal for $16!! I brought you along with me into the kitchen (via iPad) when you did the caramelized onions in the slow cooker, those were so good and such a great way to do them! It’s funny, I recently found your channel in August and have been obsessed with the food preservation, meal prep, and getting into self reliance. My husband will come home from work and say “What did you and Rose Red do today?”😂 Thank you both again x1000 for all the work and information you bring to us viewers❤

Love having onions on hand at all times! I take a bath puff apart, it’s a long tube of netting, I can put an onion in and tie a knot (like the nylons) between and then cut off one at a time.

I save those mesh bags that avocadoes and onions come in, when you buy them at the grocery store. I have a whole stack of them. I use some as dish scrubbers, and some as storage for onions, or herbs, that need to hang dry. You could also use one of those mesh laundry bags for washing delicate undergarments. They have them at Walmart. Can't wait to see your onion videos!

When cutting onions, place a fan so that it blows the gases away from you. My mom had a ceiling fan above her counter. I place a fan by the sink in my “u” shaped kitchen so that the air blows diagonally across the front of me. This makes a big difference in the effect onions have on my eyes.

Pam, when you are crockpot caramelizing your onions, remember your Instapot has a slow cooker function as well. So you could run your crockpot and your Insta pot at the same time.

Instant Pot's do have a slow cooker option, but it doesn't work well because the heat source is on the bottom VS a slow cooker has heat on the bottom and sides.

From Little Mountain Homestead, Chelsea advised to use "onion goggles" she found on Amazon. About the size of reading glasses with foam around each lens so the onion juice stays out. They work great!!!!!

With your science background I am sure you already know if you keep the onion fumes/enzymes from getting to you then you will not cry. All you have to do is place a fan near you position it so it blows across where you are cutting the onions. The fumes will be blown away from you and never get to you so you don't cry.

I wanted to share how I store produce like onions, potatoes, etc. I get the flat, stackable boxes like strawberries, raspberries come in at Costco. I can then do a single layer of onions and then stack the boxes. Last year I read that you shouldn't store onions, potatoes or winter squash in the same location. So I spread them out as much as possible in our garage. (Our garage doesn't freeze because it is under part of our house. Then if I have an onion go bad. I can see it and throw it away. Because they are in a single layer, they don't spoil other things around them. With potatoes, I store them the same way, but I cover the boxes with a heavy, dark towel so they don't get exposed to the light. Last year the onions that I bought from a farmer stored 10 months and I only lost a handful out of 10 bags.

I have been making onion broth like a mad women. It is my favorite broth. I have onions in the slow cooker right now getting caramelized. Unfortunately I already used up the Vidalia onion broth I made. I love doing this!

I absolutely LOVE VIDALIAS! Being a Georgia girl, that's the only kind I buy! The crops that come in during May are still good through about February with proper storage, so I end up using the Texas sweets for the next few months.

I love caramelized onions. I didn't know they can be dehydrated. I can't wait to see how they come out. Don't forget you can freeze them caramelized too.

Wow - we bought a 50 lb bag of onions 2 weeks ago - we put some in the freeze dryer, some in the freezer on fdr trays and some in bags for quick use in the freezer - we'll have to do the rest soon - we just ran out of freezer space - none of the onions tips worked until I set up a table and chopper outside and for the first time ever I didn't cry - it was chilly and wonderful

@@lauracarter2223 I make sure that I clean the hose out - I haven't had much of a problem. Garlic is the worst and even that I clean out the whole thing with warm baking soda water making sure to clean out that hose, shutting it maybe to hold the baking soda for a while

Thanks to Darcy from The Purposeful Pantry I have been making caramelized onions, dry them and then powder them to have caramelizes onion powder. Such a game changer.

THAT is a great deal! I buy them in 10 pound bags from Costco and I think I pay about half that price. I freeze dry about 2/3 of the bag for onion powder and then dice and freeze the remaining for cooking. Tip: If you decide to freeze onions, portion into non-zip baggies and freeze in a glass jars or everything in your freezer will smell like onions. Not in a good way. 🥴

​@@esthert4868Over time, the onion scent seeps out. I put mine in baggies and then put the baggies (2-3) into a plastic freezer container that I use only for onions. It's really difficult to get all of the onion smell out. I worry about using glass in a freezer, but many people do it.

I always cut up the onions and put them in freezer bags and put them in the freezer. I take them out and I have them on hand for my dishes. I always keep a few fresh onions on hand too.

I use a fan to blow gently in my direction when I process a lot of onions. No tears!

I really like the old Spanish onions, strong flavor. How ever the sweet onions are OK. I would freeze dry at least half of those or more and replenish fresh as needed.

Omgoodness I haven't even finished the video and I ordered 2 giving me 10 bags! I have a wheelbarrow full of onions that I have been working on stringing up and it never seems to get smaller. That wheelbarrow still looks full!!

When I do a marathon onion processing, I use gloves, wear my glasses and most importantly PUT A FAN BEHIND (and slightly to the side) of me POINTING AT AN OPEN WINDOW OR DOOR! The fan has made all the difference for me. Dehydrating is my usual method of preserving. I put the dehydrator outside to avoid filling the house with onion fumes! Good luck! 😊

I usually get 25 or 50 lb bags of onions early. I hang them in the bag in the garage. I like having smaller bags since it is difficult to get onions out of the large bag. I just ordered some!!! I have canned up caramelized onions in 1/2 pint jars and they are delicious. I also canned some beef with onions and peppers last week so I have now used all the onions I had on hand. Time to get another box from the local farmer.

We make onion powder too. I use a mortar and pistil to grind the dehydrated onion into powder. You may not want to do it but may mention it to others to try.

What a beautiful bag of onions! I am so looking forward to your process of preserving the caramelized onions in the dehydrator. I have been slowly dehydrating onions over the last several months (I do it in small batches in my toaster oven that has a dehydrator function). This method works best for me - though I realize it is a long and tedious process, it just works better for me this way. Thanks for sharing this with us! You always bring us such wonderful, helpful and exciting content!!

My concern, @RoseRed, is that farmers use all kinds of nasty pesticides, herbicides, and more on their fields. I used to always buy (and glean for free) from local farmers. Then a woman was talking about her big garden and I said “why do you have a garden when you have all these crops in the fields?” And she said “because to get a contract for a crop we have to sign a paper to use all the pesticides, herbicides, and fertilizer they tell us to and I won’t feed that to my family” {!!!!}

I just found your channel with this video popping into my feed, so glad it did! A 50# bag of onions for $16!!! 🤩 That's $0.32/lb!! I had to chuckle when you said, "Why grow my own when I can buy this bag for $16?" So true! I live in south FL so onions, potatoes, etc are very hard to grow successfully in our very short season of 'cool' weather. Onions here in my city are about $1/per lb right now, sometimes higher - and that is at Aldi.

Cheers from Ontario, Canada. I use organza bags to hang onions. The fruit flies can't land and lay eggs on them. The handles aren't as heavy duty as yours, but will hold quite a few. I will have a go at the caramelized onions for the freeze dryer. I make up 1/2 pint soups and bet these would be fabulous in all of my various freeze dried individualized soups. (like your Hungarian Mushroom Soup recipe and my smoked turkey soup in a jar!) Btw I use the organza bags during the growing season on my fruit trees and elderberries to keep insects and birds off while they ripen. I use organza bags to store fruit or tomatoes on the kitchen counter, mostly during fall when those pesky fruit flies show up!

Since I live in a hot humid area, storage is a problem. I get a 25 lb bag of Texas sweet and I will freeze some and dehydrate the rest for powder and pieces.

We had a years worth of rain March-July and the tomatoes, onions and potatoes suffered for it. I don’t have near as many onions and many like potatoes are rotting. And we had to harvest early with extended heat this year so not good for storing. I will probably freeze them as that is easy. The freezer can smell like onions and I put the bags inside another larger bag. They are so easy to break off what you need.

Re crying when cutting onions. You probably don't need to reinvent the wheel here. Chelsea at Little Mountain Ranch is extremely sensitive to onion juice, and has tried EVERYTHING over the years. The only thing that really works is goggles! Thanks for the fun.

Lol when I saw all those onions, the first thing I thought, "You are going to be crying a lot and to keep several boxes of kleenex handy or a stack of towels". Your eyes are going to hurt when you are done with all those. So worth the effort though. Good luck. I wish we had a wholesale/retail restaurant food supply store near us. When we lived in Washington we did and I loved shopping for bulk there. Here we gave to go 2 1/2 hours north or south to even get to a Costco. We have a Sams Club an hour away but rarely do they sell anything in bulk packaging. Sometimes 25 lbs of rice and have seen 50 lb bags of popcorn but other than that, out of luck for bulk items.

Like those bags! Nothing better than to see a flatbed truck hauling onions from the fields to store distribution centers. Potato harvest as well. Our economic bargaining chip in times of diminishing factory output is appreciated. Yes, a few dollars spent avoiding work is smart but there are other concerns. Onions have always been a fad crop for home gardeners. You can plant varieties designed for taste and specific uses as opposed to handling, storage and transporting to market. In Europe vegetable crops are grown close to the cities to maximize selection for taste and processing not durability for transport. Does it make a difference? Yes, but I think Jim made a great buy that was all around smart. They look beautiful and think about all the work you saved yourself. Potato varieties are adapted to use. Good seed catalog will give you suggested uses such as baking, boiling, broiling and frying. An index of flesh density can also help.A potato chip factory will select best varieties for processing. Truthfully, we were always glad to have potatoes of any kind when wanting to cook. Potatoes kept well for us. Hungry enough for a french fry cook-off had us grateful for any kind. It was all about the ketchup anyway! This video was unexpected. Please more like this. Thanks.

Good points. I do love having home grown onions for fresh throughout the winter. I preserve large batches of farm produce too. I do worry about chemicals from farming practice but figure if I'm peeling it, there would be less stuff on it. Pam did an interesting vid about washing fruit to minimize exterior pesticides. Next season its more potatoes and corn for us and stuff an onion plant around the edges.

When you cut the top off the onion, a bunch of liquid oozes out. I find that rinsing that off helps a lot with the tears. When I'm cutting a large number of onions at once, I cut the tops off of all of them and toss them into cold water to soak for a while. It makes them much easier to peel as well. Many people swear by blanching them in boiling water or heating them in the microwave, but I've never tried that personally. I may try blanching mine when we make our massive batch of salsa next week. It should make peeling them much easier, at the very least.

In terms of avoiding eye burn my husband suggested that it comes from inhaling the gasses. Also if you can put them in the fridge for a bit before cutting that can reduce the problem. I am usually impatient and just get a good cry on but I have never processed 50lbs either. That’s a lot of tears!😂

I live in Michigan so cannot use my garage or barns to store foods. Its all got to be atored in my house (without a basement 😢) i did install a 2nd set.of kitchen cabinets that came.out.of a 100 yr old farmhouse and I LOVE THEM FOR STORAGE. Big deep cabinets with fully adjustable plywood shelves. I no longer have room for a dining area, but we just sit at the island and use it like a table

The All New Ball Book of Canning and preserving has a recipe for Balsamic-OnionJam on page 59 (water bath can). I have also made a Quick Red Onion Marmalade (page 94 in the Ball Complete Book of Home Preserving). I can’t find the recipe for Peppered Onions that I preserved in 2022. All of those were good recipes.

If you still have your kitchenAid mixer and want another gadget they make a dicing attachment. It’s pricey but apparently worth it if you have hand and wrist issues. I believe it has slicing capability as well. All you have to do is cut the onion to fit the shoot. Some newer food processors come with this attachment as well. I’m watching for a sale but haven’t purchased it yet so I can’t advise on personal experience.

I like using a mandolin to slice the onions and then using a food chopper to dice them. It goes quickly with those tools.

If you are dehydrating onions or garlic, do it outside if possible. The smell can be overpowering inside a house.

I did pickled red onions in red wine vinegar, using the Ball recipe, they had good flavor but unfortunately the red onions turned grey after a couple of months. I ended up discarding what was left since they were not appetizing. I think yellow onions in cider vinegar might be a good variation on a tested recipe.

I'll wear swim goggles to cut onions when they're especially potent (and dream of finding ski goggles). Needs must! I've caramelized onions in a big roaster (lots of stirring until they release their water), and both dehydrated and canned them. For canning by themselves (using NCHFP guidelines of 40 minutes), I don't reduce them beyond a golden color; neither do I add butter or oil. They still taste sweet and delicious. The French onion soup I've bottled I've yet to use, but I'm creating a list of other uses, like stroganoff. Thank you, Lord, for 50 pound bags of onions! Have fun, you two, and God bless! When I was a teenager my mother acquired some onuons and dehydrated them in the oven because that was all she had. None of us got sick with colds that winter! Just sayin', as that is the power of onions!

I cut or slice onions and freeze them in portions size containers , dehydrate some , and I just made onion jam for the very first time , haven’t tasted it .

I love where we live; however, access to a Restaurant Depot is basically non existent. We have Sam’s club, but Costco is 2 hours and Restaurant Depot is about 3 hours. Azure Standurd would cost just over $50 for 40 lbs of onions.

I love onions. To keep from crying, dont cut the root end off the onion until you have to. Thats where most of the tears come from.

I don't have a restaurant depot anywhere close to me 😢, I also don't have a freeze dryer yet 🤑 I'm trying to get the rest of my preps done first. I do have a dehydrator. I made the Salisbury steak the other day ❤, my husband told me to make sure I put that in the regular rotation of cooking even my kids liked it 🤯! So the thought/question is when I can find deals on onions and mushrooms then dehydrate them would this work? P.s. my daughter ❤️ LOVES your how to make bread recipe, she has done it a few times, and goes on and on about how thorough "grandma" is (she can't remember names, but this is how she refers to you and I instantly know who she's talking about 🥰).

This is unrelated to this video but I thought I would mention it here for you and your viewers. Many of the pecan trees went down in the hurricane. You might want to purchase and freeze yours now for holidays. Because the trees went down, the shortage might last for years. Peanuts and peanut butter will probably be affected by the storm. This should just be this year's crop. More dairy cows dying or sick of bird flu in California than they expected. Might affect price of dairy. Some cadaver dogs in North Carolina have died from toxic material in the mud they are searching for bodies. Not sure what toxic material or how widespread, i.e. did it get on the farmland?
