The one thing I wished I would have known about is to get the double version. You can use the single wall year round if you want but pellet consumption is crazy. May be a whole bag for a brisket.

Jhaas, I have used mine in very cold temps during Colorado winters and only notice a change in pellet consumption during high temps cooks. During lower temp cooks I only noticed a slight change in pellet consumption of maybe 5% more. The wifire grills work great during those colder winter months. Chef Jason

I like the idea of double wall grills, but am confused as to why the smaller grills only have double wall on the sides. Seems like having a double wall on the lid, like on the bigger models, would go a long way in retaining the heat. Question: On the double wall grills is there insulation between the walls, or it simply two walls relying on an air insulator? Living in the upper midwest where winter temperatures drop well below freezing (and zero), having an insulated grill is a necessity.

Hi Radio, the double wall uses an air pocket as the insulation. Similar to how gas grills use their double wall insulation. I have used these grills in below zero temps with winds in Colorado and don’t have an issue with it holding temps. My Pro575 with Wifire was beta tested during one of our coldest winters and performed great at all temps, even 500°. Happy Cooking, Chef Jason

Great to know! I have (several) Big Green Eggs and their thick ceramic walls/mass provide fantastic heat retention in the winter. It's interesting to hear the neighbor's comments when I'm smoking ribs on a very cold January day. Seems the smell goes a further in January :) Looks like it's time to explore "another" outdoor cooker!
