I'm thankful that my 101 year old Mom just got a clean bill of health. We try to eat fresh from the garden as much as possible. Love the healthy way you feed your family.

One of our favorite meals of the summer is to take leftover cooked chicken and put it on a pita with cucumber, onion and sour cream or hummus. We add olives when we have them. Sprinkle some fresh oregano or parsley on top and sprinkle salt, pepper and garlic powder (or add fresh minced to the hummus or sour cream). Chicken gyros! Cool and easy to prepare, and we all really enjoy them in our family. I’m thankful for the Lord getting me beyond halfway through a difficult time. He is faithful, and He is my strength!

Yes, today, after 68 looooong hot days in Texas without a cloud OR drop of rain AND 100+temps, we were blessed with R.A.I.N.!!!! A good soft soaking rain for about an hour of one day and the temps cooled somewhat to low 90's!....what we call a definite cool front for us Texans, lol! Thank you, Jesus, for every drop of mercy/rain!

As a child we loved when mom would slice fresh cucumbers and onions up into circles and put them in water with vinegar. After sitting overnight it tasted great! We didn't have to wait for pickles! I am thankful for kind people who take time to speak to you and say hello and that don't mind doing their job.

So much to be thankful for !!! I try to cook 2 meals at once . Or at least partly . Exp. cooking beef for spaghetti, make enough spaghetti for 2 meals , cook more beef and use for casserole , chili , soup . Add a lot of onion , peppers and tomatoes to spaghetti, use less beef .

My favorite snack is a fresh kale salad, it's raw kale, onion (red or green onions is my favorite to use),can of cannelloni beans, feta cheese, tomatoes, then I mix some olive oil, salt and pepper and lemon juice. Mix everything and let it sit in the fridge overnight and it's the best fresh side salad. The lemon juice helps wilt the kale. I also like to taken green peppers cut in half and bake for approx 10 minutes, then I add ranch dressing, chicken spinach, onions and mozzarella cheese and bake again until the cheese is melted, it's a good keto friendly lunch or dinner. Can also do the same,cut your green peppers in half bake approx 10 min. Then add pizza sauce, black olives, turkey pepperoni, turkey bacon, onions and cover with mozzarella cheese and bake in the oven for 15 minute until cheese gets melted. You can add any pizza toppings that you like. It's basically a pizza without the carbs. They are so delicious and so easy and quick to make. Another keto friendly meal I make that we really enjoy, is use squash, zucchini,onion, and fresh tomatoes from the garden, slice,chop and add it to a skillet with a lil bit of olive oil and then add some pepper and Italian seasoning or you can use fresh oregano, thyme etc.. cook until everything is tender and then add cheese on top and cover with a lid. It's so good paired up with chicken. Sometimes I'll cook chicken and then add it into my skillet and cover it with the squash and zucchini mixture and add my cheese and bake until cheese is melted. One skillet meal. It's easy and quick and keto friendly. I have more lol but I've rambled on way to long on this post lol have a great evening and love your videos

When the boys were teens, I kept a lot of veggies chopped up and shredded chicken or lunch meat in small pieces in the fridge. I pulled out all the containers and the boys were happy to have chefs salad - everyday when it was over 90 degrees. I would try to keep pita bread or tortillas on hand so they could make it into a wrap if they so chose (also made them more filling). For dressing I used sour cream or homemade ranch mixed with a mashed avocado. I felt like I could get more greens into them this way. As adults, they will still eat a good green salad and their wives are astonished.

I'm coming to this video about 2 months too late :( I'm finding myself incredibly thankful for these last few years with my children under my roof. I've got late teens who are about to test "spreading their wings". I have been savoring every moment we have together. I always knew that they are not mine to keep - they are only on loan - but it's still hard. I would love to own a piece of property, like yours, where my kids could live independently, but still close by and interconnected.

My middle son is a vegetarian so a family favorite is egg & olive sandwiches. Sliced sourdough bread, butter & toasted on one side. In separate bowl add chopped boiled eggs, mayo, mustard, salt & pepper. Chopped black olives. Layer of olives as thick or thin as you like on top of layer of eggs. Obviously you need to like eggs & olives! Love your beautiful family.

This may sound strange but we LOVE cornbread salad! Make a pan of cornbread and add a cut up bell.pepper, a chopped onion, some whole kernel corn or whatever veggies you like. Then cook up a package of bacon and crumble it in. Finally, add some mayo (or whatever binder you prefer) and mix well. Top the salad with juicy, red, chopped tomatoes from the garden! WONDERFUL and goes a long way!

That black bean dip sounds delicious. By accident we discovered how delicious curried ,mashed boiled eggs are as a dip. Last time we grated celery and carrot into it too then we get any veg we have and cut it up to dip. Its so yummy and gets the rainbow of veg in too. Thank you far sharing lovelies 🤩

One our quick summer meals is cauliflower tacos. Roast or saute cauliflower slices with lime juice & make a salsa with tomato, red onion, jalapeno & cilantro. Serve on flour tortillas with chopped cabbage. ❤️

I’m celiac and avoid the junky gluten-free bread yet haven’t managed to bake my own. I’ve been baking flatbread weekly and throw veg like mushrooms, zucchini or carrots in them too. Last I made dark miso and spinach sandwiches and this week I’m adding horseradish relish and salad leaves. I another to go snacks lunch is hummus, salad sticks and boiled potatoes. I love roasted seaweed snacks too but it’s been too long since I had some. I’m grateful for the heat wave us Brits got and also that it’s just warm now.

My garden is doing GREAT!!! I have so many pumpkins coming out, I have giant ones too, if you would like some seeds when they are mature let me know I will send you a few. These make HUGE Pumpkins :) I did a garden update video a couple weeks ago but it is time to do another one. I have canned plum jam/ and TON'S of pickles (I do video's of that too) but my cucumbers are going crazy I have gotten so many it is CRAZY!! just hoping my tomatoes come more plentiful. I LOVE how you put your flowers between your other stuff. your sandwiches on the flat bread looks delish!

Up to Kip's concern of eating less carbs. Frankly, I don't quite follow it. Here is why - every day we pray " give us our daily bread". So how this bread (carbs) can be sth not good for us? Unfortunately the wheat today has been hybridized so much that it has far less protein than it once did. The only wheat grain not hybridized is Einkorn and it is delicious, yellowish, buttery, and so good for you. The protein is a different structure than that in any other wheat and much easier to digest and process by our bodies - many people that are gluten sensitive can eat Einkorn without any problems. It comes the way God formed it originally and if really hungry, you can eat the berries without even cooking them - snack full of protein.
