Nice to know you can just dip the dough into a bowl of water with baking soda added. I was always taught (my mother taught me to make soft pretzels about 45 years ago) that the water-baking soda solution had to be boiling; after dropping the pretzels into the boiling solution, they float to the surface, and then you scoop them out & put them on the baking sheet. But your way is definitely simpler. Thanks for teaching this old dog a new trick.

I tried to make a beer cheese a while ago (different recipe) but it got all lumpy and just separated :'(, is there anything I should watch out for when I make this recipe so I don't make the same mistake? Or is is at straight forward as it looks, because it looks fantastic!

+Olivia Compagnino Thank you so much dear! I really don't think you can go wrong with the beer cheese dip. However if you wanna take extra precautions I recommend the following. Once you add the milk, turn the heat down to medium to avoid it seperating. And if you are worried about the cheese going gritty you can use regular cheddar instead of sharp. Sharp tends to be slightly more sensitive to work with. And once you have all the liquids in and you're ready to add the cheese, you can turn off the heat but leave the pot on the burner while you stir in the cheese. Hope this helps! Hey there. She is making a roux similar to what you would make for a homemade Mac and cheese sauce. The key to no clumping is adding COLD milk & turning the heat OFF when you start adding the cheddar cheese. Stir often so everything melts evenly and nothing burns. Should do the trick!

+Adrianna Krupitsch As long as you cook it long enough it will be perfectly fine. The alcohol cooks out. I dont think it cooks out completely but it's not enough to have any affect on anyone.

Rethink putting the salt directly in the yeast. Salt kills yeast. It would be better to mix the salt into the flour to buffer it when you combine the wet and dry ingredients. Good video!

So what kind of beer do I use? It says anything. My girlfriend doesn’t like beer but she loves beer cheese. I drink modello ipa yuengling and pretty much anything. What kind do restaurants use so I don’t fuck up her surprise.

The brown crust at the mall is made using a very harsh chemical called lye. When you add lye to water it heats up to about 200°F. When that neutralizes, people add the dough to the water mixture to create the brown crust. Note: it IS food grade lye. But lye, nonetheless.

Interesting recipe. Instead of milk in your yeast mixture, use a rich German lager. Same with your cheese sauce. Shiner Bock is a great Texas Hill Country beer. Also, instead of hot water, it needs to be boiling. And use a Camembert cheese or Bavarian Obatzda. Cheddar is just too American.
