Hello Folks!
I hope I find you all well. Tonight I'm making Rumbledethumps! You may not have heard of it before...It's a traditional dish from the Scottish Borders.
The main ingredients are potato, cabbage and onion. Similar to Irish colcannon, and English bubble and squeak, it is either served as an accompaniment to a main dish or as a main dish itself. It's so tasty....and a wonderfully filling comfort food!
There aren't really any set quantities of the individual ingredients, it's really a matter of personal preference, but I've listed below what I've used here....incase you want to give it a go!
You can add all sorts of things to this to suit your own taste and dietary requirements.

Serves 4 (depending on portion size)
5 -6 Good sized Potatoes - I used Maris Piper, a dry floury potato is best!
50g (1.7 oz) Butter
1 Tablespoon olive oil
2 Spring onions, sliced
2 Good handfuls of grated cheese - I used mature Cheddar
Half a head of cabbage, shredded
200g (7 oz) Shredded ham - I used smoked ham hock
1 Large onion, chopped

Definitely. I'd probably go full Indian fusion on this and really flavor the potatoes but that's the best part of cooking. As long as you like the results you can do whatever you like!

I am in America and I made this last night for my husband and I did add what we call 'ham steak' which is a big slice of I guess smokey ham and cut it up small he and I both loved it as a matter of fact I had some for lunch today and it was even better the next day! Thank you for this lovely recipe. I also used Cheddar Cheese and was perfect.

My scotish grandma made this often as a side dish for Thanksgiving for our family all these foods were lost when she passed,Thank you for this one in definitely making it.

I'm doing a ham for Thanksgiving. I'd been thinking of roast potatoes, but may now switch to these, minus the shredded ham the first day, and if there are leftover rumbledethumps, I could shred some of the ham into that. I usually just do them with potatoes, cabbage and onions, but this is a tasty alternative.

I love Rumbledethumps. I always serve it as a main course with some ham added in, alongside a green vegetable like broccoli and some roasted and buttered carrots. I love the idea of bringing the veg almost to burning to get some nice roastiness; I'll have to try that!

I've tried a version of this recipe from a Scottish KZbin channel and it was glorious. I'm now imagining using it as a topping for Cottage Pie instead of plain mashed!

We're from Kolkata, India. We spent a month in the UK earlier this year for a holiday. A 9 day Scottish sojourn was over of the highlights of the trip. Since then I've fallen in love with the Scottish accent!! ❤

Fellow Scot here from the east. I made it today following your recipe using the ingredients I had to hand and everyone enjoyed it very much. The key points I took were to almost caramelise the cabbage (I had red onions, red as well as savoy cabbage. Took longer than expected but worth the wait.) I also had the leaves and stalk of a cauliflour which I chopped and bolied with the potatoes. Other than that I followed your video closely and it turned out lovely. Scotlands answer to spanish tortilla?! Thank you very much.

This has been a favourite of ours for years, with crispy bacon added rather than the ham. We call it Baked Colcannon. Baked beans, and a slab of buttered crusty bread, are mandatory!

We have something similar in Newfoundland only we do it with leftover jiggs dinner. We call it hash and it’s just fried up potato, turnip, carrot, cabbage and whatever meat we’ve had, typically chicken roast beef and salt meat.

Back in the late 60s I was apprentice to a French Chef and later a Swiss one. I know and love that art but today I look for regional dishes from around the world revealed by youtube. Not quite ready for haggis yet but rumbledethumps sounds great. Thanks!

In Germany I think there is something similar, called Dippekuchen. A Scottish friend of mine here in Germany makes rumbledethumps with sauerkraut instead of cabbage.

@@sadmimikyu8807 It's not the same thing, of course, but the ingredients are similar. Here it's known as a Rhineland speciality, and in Saarland it's called Dibbelabbes. I don't know where it was originally from, but I found this: 'Der Döppekooche ist eine alte rheinische Spezialität und ein sogenannter Topfkuchen. „Döppe“ heißt Topf und „Kooche“ ist der Kuchen. Früher galt der Döppekooche auch als „Arme-Leute-Essen“ und wurde traditionell am St. -Martins-Fest aufgetischt, weil sich die einfachen Leute keine Martinsgans leisten konnten.'

@@sadmimikyu8807 Nein, aber ich habe jahrelang in Wiesbaden gewohnt, und hatte Freunde aus dem Westerwald, die öfter 'Dippekuchen' als Spezialität aus ihrer Heimat serviert haben. Es heißt überall anders, und wird bestimmt auch unterschiedlich zubereitet. Ich bin sowieso Ausländerin, also bleibe ich bei den Versionen aus meinen beiden Heimatländern - Bubble & Squeak and Colcannon, und auch Rumbledethumps, wenn es sein muss 😅

I’m making this tonight! Hello Cheryl! This looks fantastic! I've heard so many chefs on TV say browning = flavour, so it totally makes sense to develop that deep brown on the cabbage. Plus it's developing the flavour on the onions as well. I might be American born with Canadian roots, but coming home after a long day eating lentil soup and watching your video has made me feel a tiny bit Scottish and also has relaxed me so much. Thanks for sharing this, and like others I could listen to your gorgeous accent all day. We had this growing up with English dad and grandparents. The bubble-n-squeak was fried up, & had any left over veges, although often extra was made on purpose ready. A favourite with us, and the frying pan crust bits mixed back in a few times made it so good!

It looks like you peeled the potatoes with a sword! Tip for a tasty snack: Put potato peels on a plate, drizzle with olive oil and microwave on high for 2 minutes or so. They are done when crispy. Enjoy.

It is, but the chef tip is to put the oil first to prevent the butter burning. Makes sense.

I love my rumble thumps I've made this in so many variations even red cabbage bacon , ham hock , sausage even fish both yellow and white.

I didn’t know this dish had such an amazing name. I haven’t made any from scratch in ages. I will use sprouts at this time of year. If I have left over roast potatoes from Christmas dinner I’ll use those for extra crunch. I generally have a chicken at Christmas if there’s any of that left it goes in.

Here in northwest England we call it bubble and squeak, it's especially good a day after, fry it up and put brown sauce on.... yummy
