Chicken math…. It’s tricky!! Bridget says she has no chickens, only layers, chicks and roosters 😀 Totally agree with spending the time to portion the chickens. Saves way more time down the road and it makes me more creative with meal planning!!

I'm partial to a whole roasted chicken - can't go wrong with that. But I can't say I'm sad that I get to have a couple of wing nights now. However as head food taster and not head chef I'm just happy to be eating cooked food. -Dom

Pro tip! You only need to rest birds you’re going to keep fresh (aka not frozen). The process of freezing and then thawing will do the same for rigor as the rest will and you won’t use as much ice.

Hey! Thanks so much for that! We have heard only that they need to rest either before freezing or after thawing. Next time we'll try to put them directly in the freezer and see if there is any difference. The ice gets expensive.

@@ODriscolls Yea, we stopped resting last year for the same reason. If you start cooking a bird that’s in rigor it will be tough, but we did a side by side last fall with a bird that went into the freezer in rigor, and a bird we had rested, and they were identical in taste and texture.

My goodness, you guys must eat lots of chicken 😂 On your next processing day, I'd love to see a more detailed video on how you clean out a chicken, and cut it up. Having chicken pieces must be much more convient than whole birds! And ground chicken!! Did you grind up just the meat or the skin too? (sorry, I have no clue) Great job guys!!

Oh we will try to show that! Might be the blind leading the blind if Dean isn't here 😅😅 I ground it up skin and all. The fat was under the ski so I wanted to make sure that was in it too. It's been super tasty!
