Stephanie, I've been watching your fabulous and educational videos for years and I have to say that it is always your tips that help me the most. I am an older woman who hasn't done a huge amount of baking and because of that, I tend to forget a lot of things by the time I get around to baking again. What has helped me the most when I watch your videos right before baking is your tips that ensures that I get the best result. For example, in this video your tips about not spreading the jam all the way to the edge of the cake, wrapping up the cake for a half hour before icing it, and other tips as well are what give me the best results! You are so awesome Stephanie and I thank you for improving my baking skills in the kitchen....man, I feel like I owe you a pay cheque for mentoring me LOL

I love this recipe. It's fantastic. In my opinion, using the zest in the frosting is no longer optional. I recently added orange zest and it really made quite a difference. I can't wait to experiment with lemon and lime zest.

So I made the cake, the cake itself is SO GOOD! The frosting is pretty sweet, I added orange zest and it made it have a nice taste. I put strawberry preserves in the middle and decorated with blackberries. It was really good.

I just wanted to say what an outstanding job you've done on this masterpiece of a cake. I have made a couple of your pound cakes and the flavor and everything came out really really good. The second cake I made was the smaller pound cake I use salted butter and it made the cake a little salty to me but other than that the flavor was excellent. I want to try this one next so I'll let you know how it goes thank you for sharing these beautiful cakes.

Another hit (almost... because I forgot some essential steps, like the baking powder and salt... ahem!) Yes, it did shrink but once I cut it horizontally, the crumb was very fine and the taste was really good, so tomorrow I am off shopping for ingredients and trying again to get it right. Lovely cake!! Looks tasty! Try frosting the layer first and then the jam over that...maybe wouldn't mix them up as much...or jam on one layer and frosting on the other layer and put them together.

Consider her youtube page as a "moving" cookbook. It's much better this way, because she can explain in practice the details and the alternatives and you can clearly compare and see how you're doing. Paper cookbooks are so passé.

Hi Stephanie, I enjoy your videos! I was wondering why you don't add the jam to one layer and the icing to the bottom of the second (or top) layer and place the second on top of the 1st layer? It just seems so much easier. I made a cake very similar to this one for Thanksgiving and that is how I did it. I didn't have to think about the two flavors mixing. What do you think? Would there be a reason not to? Thanks and keep up these excellent videos!!

***** Yes, you could do it that way. Some people have trouble cutting a cake in half, so to make it easier for them, I just put the two fillings between the two cakes.

Joy of Baking She did not mean cutting the cake, she just spreads one of the cakes with the jam, the other cake with the cream frosting and then just sandwiches them. I have another way of doing a Victoria sandwich (that's what we call it over the pond): I pipe the frosting using a cut bag and no nozzle in a thick round rope that is spiralling towards the centre. It's quick and easy and gives me an even layer of frosting. But despite my decorating skills, it is your cake recipes that make it or break it, so thank you for teaching us your craft.

Yes, you could freeze the cake. Defrost in the refrigerator overnight, and then bring to room temperature before serving.

Great job!!! How can I keep firm my cream frosting in summer. Most of the time it gets melting while frosting on cake. Then I need to put my cake in the fridge again and again to resist that.

How could I replace cake flour? We don't have it in Brazil. Probably adding some gluten free starch to the all purpose flour, but not sure about the starch to use and the ratios. Thanks for the videos, true classes, they have been very inspiring! I'm a big fan.

***** Stephanie has this on her website, do a search for cake flour and it should come up. Otherwise, off hand, she explains it in the Orange Chiffon Cake so search for that recipe instead. If you are good with maths, you should be able to find the ratio and apply it to any recipe requiring cake flour. Also, do look in your stores for 00 flour, the type that is used to create pasta and fine sauces. It may not say cake flour but it is! Finally, you should always check the protein content of a packet of flour because different manufacturers produce different flours. Again, Stephanie explains what percentage of protein is in the cake flour she is using. Hope this helps. :)

Question: What's the difference between a butter white cake and a white cake, aside from one has more butter? Do you have a recipe for a white cake? I like a white cake that is very white.
