Want to ask you that you put the dough in oven to prove and say temperature arond 35 or , did you keep the temperature on even though the dough is in the oven already , or you switch it off ?

Yes, you can either lower the temperature by 10 degrees Celsius or place a foil on top once it turns golden brown.

If you don't have milk powder, just ignore it. Or you can add the same amount of condensed milk instead.

Yes, you can store the poolish in the fridge overnight but better to use it in 36 hours.

What kind of YEAST for the MAIN dough? Instant or Dry. If it's NOT instant, doesn't dry yeast needs to be soaked in liquid first to relax??? thanks for the reply
