I watched how-to videos on cooking rice by different chefs & home cooks and this is by far my favorite. It takes a bit longer, but it results in rice that separates into individual grains, isn't sticky, and isn't complete mush. I've used it to cook white rice and basmati rice with the same results. Results are also very consistent, haven't had a bad batch yet.

It's the butter. U can substitute oil as well. Make sure the water u use is cold 🥶 when u add it . That helps the kernals from not sticking together

Was scared to try at first because didn't want it to be undercooked! Works perfectly make sure rice is super clean and use same measuring cup for rice and water. (: best recipe ever!!

Martha I am 24 years old and a good cook. But I have never been able to cook simple white rice like this until now, thank you I am now competent and confident. Now my Thai curry and chutney will sit on a proper bed of rice.

Thank you Martha, I finally can make rice that's not mushy. My wife who is from the Dominican Republic thought I was cooking the wrong way because there was no crispy rice at the bottom of the pot when the rice finished cooking. Dominicans call this con con or Paigo. I'm a person who follows the recipe until I feel I have mastered the technique. The rice tastes delicious. Thanks.

I followed this exact recipe and it worked well for long grain white rice. Previously, I have followed the bags cooking method (1:2 rice to water and longer steam time) it makes swelled/mushy rice that sticks to the bottom of the pan, which I obviously don’t like. I’m happy, and I will use this method again.

If your rice has lots of starch that you'd waste a lot of water washing it, you can "fry" the raw grains for a couple of minutes with some oil or the butter you're going to use. That'll cook away the starch and then you add the water.

I would qualify this recipe, in that I usually make white rice with chicken broth. The chicken broth is seasoned, so there is no additional seasoning needed and the broth becomes concentrated. Two cups broth to one cup white rice. Three cups of broth to one cup brown rice.

Ever since I tried cooking stovetop rice like this I will never cook it a different way ever again. This way REALLY works well. Just remember to Rinse rice really well before cooking

It should be noted she is using a pan that has a lot of cooking surface area. She is not using a saucepan.

HI Martha! I found this Just Last Week --- AND IT HAS CHANGED MY COOKING LIFE!!! I'm so DELIRIOUSLY HAPPY!! YOU HAVE NO IDEA! I have baked cakes and other baked items for decades I make from-scratch ice creams all the time, etc. They were (and are) awesome. I have three rotating bottles of vanilla beans in vodka for extract (that's what over 30 years of baking on a constant basis gets you!) My French buttercream is a Thing Of Beauty. LOL (thank you Martha and Rose Levy Berenbaum!) BUT, since my wife and/or mother did the meal prep for all those years I never really had to learn to "cook the meals". Just kept with the desserts. My dear wife passed away and our children moved on with their own lives, and I found it necessary eight years ago to begin sharing a home with my parents who at the time were in their very late 80s with deteriorating health. Mom was able to cook sometimes, but it fell to me to be the meal planner and preparer for the most part. And my food preparation brain was used to weighing everything in grams and being slavish to recipies; I found that I had very little cooking technique. Thanks to Martha, and Chef John and some excellent northern NJ Italian heritage friends, I have been amazed at how far I have come with cooking. People actually look to me for advice. LOL Now, in addition to my baking, my ragu Bolognese is *also* a thing of beauty! (amongst many other things) Who would have thought? BUT!!! RICE!! Plain ol' long-grain white rice! The DREAD! DId every which way I saw and read. Sometimes it worked. By "sometimes" I mean less than half the time. Most of the time it was either crunchy (Woo Hoo! the dog won't even eat it!) or gloppy mush. Which you *can* eat, but not in a happy way. And there was no way I'm going to use Minute Rice or the boil-in-bags. Besides the expense, I try to stay away from prepared foods as much as I can. We lost mom this last January and dad the year before. I found that I wanted to have rice more often (since it wasn't mom's favorite) and thought "I'll get a rice cooker! Everyone seems to love them! Set it and forget it!" Well, for the last month and a half that has turned out to be a lot of Hooey! I get the same crappy inconsistent results. I *hate* inconsistent results. So last Tuesday I had some frozen shrimp and decided to make Fra Diavolo with it and wanted it over rice. I love rice. I thought "Well screw that rice cooker! It's been worse than me just messing it up on my own in a pot like I always have----let me go on KZbin again and see what I can see." And I saw the usual stuff....1:2 rice:water etc. I have no idea how for the nine years that this video has been up that I never encountered it. I believe it was Revealed to me last week in a divine manner. LOL I made this just as you clearly explained that night and twice more since then. And! All three times. ALL! THREE! TIMES! I was able to create absolutely PERFECT long grain white rice. My mind is blown! POOF! It's the one-to-one! It's the sixteen (instead of 20 or 25) minutes! It's the ten minutes after that sitting on the other side of the stove top! It's all of them put together! I would have sworn on a Bible that a one-to-one ratio of water and rice was ridiculous! (And I would have probably been Snooty about it! LOL) Of all that I've learned from you over the years, this is the BEST Good Thing! HUGS

Martha says ONE cup of water and proceeds to pour the water into the pot. I tried one cup of water, not enough. Then I went back and watched the video again and as she says ONE cup of water you can clearly see her pouring two cups of water into the pot. (She is using a two cup measuring cup. When I followed the recipe using two cups all was great.

Interesting. I watched in slow motion and I can clearly see 175 ml near the top of the cup. Haven't made it yet but will keep this in mind

1:1 ratio, tbs butter and salt. Once it boils put in rice, once it starts boiling set the timer to 16 minutes. After that that rest for 10 minutes.

The type of pan has a lot to do with the result, should be like the one Martha shows with low sides...the resting. 10 mnts is the other secret......this really work.... you can melt the butter ahead of time and let raw garlic infuse flavor to the butter.... 1 teaspoon of salt is essential for a cup of rice.... good job Martha

One to one ratio is the best, I sometimes add oil instead of butter, depends on what is going with the rice. The butter or oil make the rice much better I have tried it without and not as good. Thanks Martha

as long as you clean the rice in the water runs clear and follow the recipe exactly you will have perfect rice every time I've done this for over 3 years and it's never let me down yet the only way I could improve on it is instead of water use chicken stock good luck

This is the very best method however after cooking for 15 mins turn off the fire and let the rice rest for another 10 mins. DO NOT OPEN THE LID AS SHE DID.

First, put oil, garlic, onion, chiken knorrs and dump rice ,stir 3o seconds, add hot water, and let it cook in letting reach the boil point, the lower fire and let cook, u will never go wrong

Not having good results with Goya Canilla rice, I followed the directions on the package....it comes out sticky and mushy...

I dont know what it is about my kitchen or about me but these videos NEVER work Its been 16nminutes and the only thing Ive accomplished is having rice stick to the bottom of the pot. Its still hard (half crunchy) and not even halfway cooked :/

It depends on how you like your rice. I don't like al dente, so I add more water. Not enough to make the rice mushy, just softer.

Fail. I rinsed the rice for 10 minutes, never lifted the lid, followed the instructions to a T. Ended up with crunchy undercooked rice. Martha and some of you guys must be using her special magic rice.

Which rice you have you know every kind of rice have a different measure of water and some kind of rice need to soak them for a 20 or 30 minutes before cooking them

It may have been your pot. The lid has to fit tightly, so that the rice will steam

I think it may be preference. Like pasta, the package will give directions for "al dente". I don't like al dente, so I cook my pasta longer, and I add more water when I cook rice.

She’s a donut. Butter doesn’t go in first. The butter coats the rice and inhibits the rice to absorb the water.

Try to watch ASIAN videos about cooking rice for a really legit cooking of rice. Just saying because as asians we do not cook rice this way hahaha.
