Can I carve that without having to split the wood

Absolutely! Just carry the cuts for the brim of the hat around to the back and mirror the cut for the fold in the hat on the back. If you're having a hard time understanding what I mean, check out Doug Linker's video: Carve a Santa Face Ornament - Full hand tool tutorial and skip to 1:05 to see a side view of how to bring the hat around. Check out his channel as well! He has a bunch of beginner tutorials on his channel that will help you out. My favorite is the Owl video!
