As a Viet person, i fully support the Pho innovation. Pho has French influence in the first place (since it's beef broth and cattle didn't exist in Vietnam before the French) so it's already kinda fusion food.

Pho was actually invented by Chinese street cart Merchants in N Vietnam. Using locally sourced ingredents as well as ingredients they brought from China. (rice noodles, hoisin, msg, etc)

As Northern Pho made its way South, its ingredients changed a bit. Then once the French came with cattle, the broth came to be made from beef bones. Now the most widely eaten Pho (even in Vietnam) is beef broth. This style has Chinese, Vietnamese, and French influence. It's a dish that has constantly been innovated and changed.

Nicole! I hope you see this, I heard you mention you've been trying magnesium but it hasn't really been helping. I have a suggestion! It may be something you already know and I apologize if so. Magnesium wasn't really helping me at first either, I realized I was taking magnesium oxide which is one more for helping digestion, but magnesium glycinate is the one that helps with sleep and anxiety. I switched to taking a 1000mg glycinate and it's been helping a lot since then! Good luck :)
