In some v1.4.3 mod, there is a boss whose hitbox is 1px x 1px. (However it's available on April Fool)

If you do 1.3 mods, them Pinkymod is a top contender with Manifestation of Pinky, Sunlight Trader (the dude, not the bird), and maybe also Valdaris the Harpy Aegis (if you don't count her weapon). Also Mod of Redemption has some short mini-bosses like Fowl Emperor, The Janitor, and Calavia.
