Hey Troy. Thanks for the well wishes and thoughts for us in Florida. The eye of Irma went through my town and caused a lot of destruction. I had some roof damage and water damage. Family is good. Worst part was that I couldn't make any Barbecue videos the last 2 weeks. Back to making videos this weekend

Nice cook T-roy. FYI the turkey hanger isn't included with the PBC, it's an accessory they sell. The PBC is a chicken cooking machine. I usually cut my birds in half and hang them with the hooks. I'll try using the turkey hanger since I bought one for my Thanksgiving cooks. One thing I've found is hitting the bird with some good canola cooking spray every hour or so will also really help to crisp the skin up!

Nice Bird Troy, PBC is a great product. I haven't used mine too much since I bought the Big Joe. I keep it in my Truck when I travel and use it at Parties or the Campgrounds I visit. I don't have that small Chimney so I had the same problem with the bigger one. So I picked up 2-24" Dowels and screwed Lag Hooks into the ends of them. This way I can light the Basket on the ground, pick it up, and place it in without getting scorched.

T-Roy, what if one was to stuff the chicken with just some plain chicken stuffing mix? I dont have a PBC but I think I can try it on my WSM 18.5.

That would definitely work Kevin, but you may have to tent some foil on the bird at the beginning to keep the skin from burning up. It will take a while for that stuffing to get cooked since it's inside the bird. I usually just make the stuffing on the side.

Hey Troy, that flavor is what my family demands from me. We have a WSM and I achieve that same flavor with the water pan out. The WSM is pretty versatile and the top rack never allow flair ups. The ribs without wood is also a favorite since I can control the vents and temp. We tried your jalapeno cream cheese wrapped thighs on the WSM without the water pan and oh man...as you say, it was some same fine eating my friend!!!! MMMMHHH . Basically we turned our smoker into a Pit Barrel Cooker and do all of our BBQ that way. Looking forward to your next video my friend. :-)

On an offset do you use a water pan for your chicken or do you let it go 'dry'? Cooked one at a constant 300 yesterday but the skin never really crisped up and I think it was because of the water pan.

For chicken, I do not use a water pan in my offset. It makes the chicken skin rubbery. Too much humidity in the air on the day of a chicken cook will do the same thing!!

Hey Don, congrats on the new WSM brother!!! I know you are going to love it! Crane is a pretty large bird, so you should probably treat it more like a duck cook. The basics are the same as cooking chicken, but it will probably take longer for the larger bird. If you are going to smoke it, I'd start out smoking it at 225-250F for a couple hours or so. When the internal temp gets to around 145 in the breast meat, kick up the heat to around 325F to finish cooking and crisp up the skin. I bet it's gonna be good!!!

Im sure the PBC does a great job but as @ChrisCuriel does below, what is the difference in just using the WSM? I've often wondered what keeps one end of your meet from cooking faster than the other with the PBC especially with ribs. One end hangs soo much closer to the fire than the other end.

I like the flavor of the meat cooked on the PBC. It's a different flavor that what you get from the WSM because on the PBC, the grease drips onto the hot coals and vaporizes getting back into the meat. The air flow within the PBC is more like a vortex or convection oven, so the bottom of the hanging meat does not cook faster. I know, it sounds like it's not possible, but it is and it does work great!!!

I just smoked my first chicken using the pbc and while it was moist it only had a slight smoke flavor. Cook time was about 3 hours on a 6lb bird. Any suggestions? I used b&b briquettes with sprinkles of hickory chips.

Use wood chunks, not chips. 1-2 chunks to start on the side of the charcoal basket so they can slow burn, add one chunk per hour

Yeah, I will probably do a couple of turkeys this year. And yes, the PBC comes with 8 hooks. I will have a rib video coming up very soon, so stay tuned!!

Hey T Roy, love your videos. Question, you have several smokers. Which smoker produces the best smoked BBQ?

Hey Charles, I appreciate the love brother!!! Of all my cookers, my offset produces the best flavored BBQ. Next would be my WSM, then my Kettle, then the PBC. I don't use my Kamado Joe for low & slow cooking because it leaves a smoldering smoky flavor in the meat. Hope that helps!

Yoders are nice pits, but so are Gator Pits, Lone Star Grillz, and Shirley Manufacturing. Oh, Lang Smokers is great too!!! So, you have options! I think I'm about to get a Lone Star Grillz offset just to change things up a bit on my channel, plus my son wants my Yoder Wichita and wants to learn how to cook authentic BBQ.

you should let the coals get going a bit before placing the meat on. You want the non started coals to heat up. Otherwise you end up with that Kingsford soot taste. (or over smoke sooty taste) I found you should let the drum come up to temp with thin smoke coming out. Then place the meat on. Thanks for the video T-roy

That looked like one yummy yardbird, Troy ! Just curious, do you ever have an issue with excessive flame ups on the pit barrel cooker burning the food with the fat dripping down in the coals ?

Stuart Harrod being an owner of a PBC the meat hangs so far away no need to worry about flair ups plus with so little air no. At least we haven't had issues.

I've cooked on the PBC several times and the only time I ever see anything near a flame up is when I leave the lid off too long during a video shoot. But, when you place the lid back on, the flames die out. I haven't really had any issues and the meat tastes terrific on the PBC!!!

I usually put a link in the description for Amazon if you are interested. It's a great cooker!!! I'm doing some baby back ribs on it later today! YUM!!!!!
