We make: Spicy Sweet Potatoes Roast sweet potatoes in oven until bottom caramelizes. In a very small saucepan, heat some oil or melt some butter, then cook some pieces of minced pickled jalapeño peppers in the oil. Peel then mash up sweet potatoes, add oil/peppers, add some maple syrup, add a little of the pickled jalapeño juice if not hot enough. Cranberry Sauce 1 cup water 1 cup sugar 12 oz. cranberries, rinsed peel of 1 orange, chopped or zested cinnamon cloves allspice In sauce pan, combine all ingredients and bring to a boil. Reduce heat and simmer 5 to 10 minutes, until all berries have popped. Cool. Mushroom Gravy 1 onion, diced 10 to 16 oz. mushrooms, minced 2 cloves garlic, minced Bell's seasoning (or substitute sage, thyme, rosemary, black pepper, and a little oregano) s & p 2 c vegetable broth 2 T low sodium soy sauce ¼ c flour sherry In a skillet, saute onion in some oil with some salt. When onions brown some, move to outer edges of pan and add mushrooms in the middle. Saute until most of their moisture is gone. Clear space in the center of the skillet and add the garlic and some oil. Saute until golden. Add some Bell's seasoning and some freshly ground black pepper and cook a few min. Sprinkle flour over vegetables and stir to combine and cook a bit. Add broth and soy sauce and stir to combine. Stir frequently as it thickens. Add sherry towards the end of cooking. Stuffing Stuffing 12 oz. Arnold Stuffing mix (Read ingredients to ensure vegan as some include chicken broth.) 1 flax egg (Combine 1 T ground flax with 3 T water, and let sit to become gooey) 3 T vegan butter 1 onion, diced 2 stalks celery, diced garlic, minced Bell's seasoning or dried sage, thyme, rosemary, seasoned salt, and ground black pepper nutritional yeast 2 c water, heated and combined with 1 t no chicken base Oil or vegan butter a 9” square casserole dish. Add stuffing to large bowl. Add dried spices and nutritional yeast. Saute onion and celery in vegan butter until celery is soft. Add garlic and saute a bit longer. Add this mixture to the stuffing and stir to combine. Add broth slowly while stirring. Add flax egg and stir again. Put stuffing in casserole dish. Bake uncovered at 350oF for 30 min. Mashed Potatoes 4 large golden potatoes, peeled, quartered lengthwise, and cut into 1/2” slices soy creamer or nutpods creamer heaping teaspoonful of minced garlic about 1 T Earth Balance a couple large spoonfuls of nutritional yeast 1 T Dijon a bit of freshly grated nutmeg s & p In a tall pot, cover potatoes with water, add some salt, cover the pot, and bring it to a boil. Tip the lid so partially covered and boil about 10 min. until potatoes give no resistance to a knife poked through them. Drain off the water leaving the potatoes in the tall pot. Mash the potatoes. Add garlic and stir. Add Earth Balance and stir to melt. Add nutritional yeast, Dijon, nutmeg, and s & p and stir to combine. Add soy creamer until it reaches the desired consistency. Cucumber Salad 1 cucumber 1/2 a small onion 1/8 to 1/4 cup sugar 1/4 cup red wine vinegar 1/4 to 1/2 teaspoon dried dill Peel cucumber and cut into thin slices. Peel onion and cut into thin slices and combine with cucumber. Bring to a boil the remaining ingredients and then pour over cucumber and onion. Chill.

Thanks for all the Thanksgiving suggestions! We’re going out of town for Thanksgiving but I’m going to try some of these for Christmas. I’ve been using your Mom’s bread recipe for a few months-I really like it-so easy, and the bread is crispy on the outside, soft on the inside. Usually I do a loaf but I may try the rolls. Take care.

Hi Wendy. Everything looks so delicious and I intend to make each of the dishes over the coming weeks. On a different note, I have those exact same yellow Tupperware measuring cups that your mom has. Mine have been part of my kitchen for 40+ years and I use them daily. On the food front, I absolutely love your and your parents approach to plant based eating. Blessings, Linda

You never have to buy salad dressing … use 3-2-1 dressings 3 tbLS balsamic vinegar 2 tbLS Dijon mustard 1 tblsp maple syrup… so 😋

That's almost exactly the same as the salad dressing we make!😊 But we also add lemon juice and use date sugar instead of maple syrup. So simple and delicious!

My parents have eaten this way for about 3 years, and yes they had many great health benefits. Yeah, it doesn't help that the toppings on the casseroles cover up all the colors.
