If you’ve never had a homemade marshmallow, you are in for a real treat! They have a pillowy, bouncy texture, and they are nothing like store bought (which is a good thing!). Because these are made with only maple syrup- there’s no corn syrup and no cane sugar, the flavor is wonderfully maple-y and so delicious.
If candy-making is new to you, this is a great project to get your feet wet. Marshmallows are actually pretty quick and really easy to make! Let me show you how!

Didn't know you can make maple marshmallows. Fun! Made the recipe and it was pretty simple to follow and make, but question why you would add water to the maple syrup because you boil it to remove water.

You need it to hydrate the gelatin and need it to get to the right temp and still have enough moisture to make marshmallows.

Can you roast them like the store bought kind?

Yes! It’s best to let them sit out on the counter for a day or two to dry and harden just a little before roasting. They’re a little more likely to fall off the stick, so be watchful/careful when roasting.

I haven’t tried that… and I wouldn’t. I’d look up a recipe specifically for that if you don’t want to use gelatin.

My syrup smells and looks burnt before reaching 242°. Did I do something wrong?

Mine are definitely darker than this....I used a standard WI maple syrup 😢

That’s totally fine! I used a light colored syrup. I think they are pretty when darker beige.

How could I make just vanilla flavored? Does the syrup serve a purpose other than flavor? Can I omit and just use vanilla?
