I think It’s a great idea of Arthur to talk to Austin drinking sake in this channel. Regardless your actual purpose of it, this picture - [Two Americans talk about culture differences between Japan and America with sake, not beer.]- makes us Japanese realize that “These two Americans love and respect our culture. “,only at first glance. Plus, I think your English and conversations become more natural when you talk while drinking. This is probably because you are drinking and relaxing. It is very helpful for our listening practice! Try 山廃j純米(Yamabai Junmai) it's a method on how they ferment the sake and it has a distinct kick in it. 山廃造りis the method, 純米you guys already know. The refined sake are definetly 吟醸酒/大吟醸 Ginjoshu/Daiginjou which are the ones that require a minimum amount of polishing to the rice before fermentation.

新潟県の北雪大吟醸遠心分離51号仕込み (Niigata Ken no Hokusetsu daiginjo enshin bunri 51 gou shikomi)、山形県の東光東光純米吟醸原酒 (Yamagata ken no toukou toukou junmai ginjo genshu)、奈良県の春鹿純米吟醸 (Nara ken no Harushika junmai ginjo)、岩手県の赤武純米酒 (Iwate ken no Akabu junmaishu) are my top 4 favorites
