Hong Kong actually has a longer history than the current PRC China, not to mention it has its own official languages, schooling system, currency etc. so they are not Chinese and they hate to be called as such. After the event in 2019, the Cantonese(Hong Kong)-Chinese relationship is comparable to Israel and Hamas. So it’s wise not to bring up anything China or speak in Mandarin(eg xie xie) when you travel there, it’s very sensitive to the locals.

Xiè xiè is Chinese, but people in Hong Kong actually speak Cantonese. You may compare that to English and French

Bare in mind that every withdraw will cost you 250 pesos no matter what. My suggestion is to take cash with you and exchange it once you there. Much better ratings.
