Cucumber Tomato Salad

Tomato Cucumber Salad is a classic dish that is both healthy and garden fresh. It's perfect for summer salads, and it's easy to make at home. Watch this video to learn all about this delicious and healthy salad, and see for yourself why everyone is obsessed with it!

Ingredients:
2 medium cucumbers
1 pint cherry tomatoes - halved
1/2 purple onion - diced
2-3 tablespoons apple cider vinegar
1-2 tablespoons olive oil
1 tablespoon Dijon mustard
1 tablespoon honey
1 teaspoon Italian seasoning
1/2 teaspoon salt (to taste)
1/2 teaspoon ground black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Cut ends off your cucumbers and peel if you like.
Cut cucumbers into quarters length wise and thin into 1/2 inch pieces
Combine the cucumbers, halved tomatoes and diced onion in a bowl.
In a mason jar combine remaining ingredients and shake well to combine.
Pour mixture over the veggies and mix well.
Refrigerate 2 hours before serving.

Years ago a friend taught me to take the ends of the cucumbers and rub each open end with them to “pull out the bitter”. It must work cause I have never had a bitter cuke since, anyone else know this tip?

Spatula...no waste...or put a spoon of the mixture in the jar and shake it...i could, and do, drink that stuff...yimmmmm

It's soo much better if you let it sit in the fridge and marry for a couple hours. I've made a version of this for 15+yes. You can't go wrong!

Your dressing is new for me i used white vinegar sugar salt n pepper and a dash of oregano im going to try yours im a diabetic this one looks healthy ❤❤

This is good with a quick tarragon vinegar dijon dressing and shallots with fresh flat leaf parsley. The recipes are good fresh food 🥑

Cucumber tomato salad is so cool and refreshing. I make mine the same way with a Dijon vinaigrette, herbs (I like the Litehouse freeze dried Italian herbs) and of course, garlic powder
