My mother in law made this salad one summer in Iran. It was so very hot and I was getting sick from the heat. She said ‘ok’ - ‘lay down’. She made this and made me eat a lot! Somehow it was exactly what I needed. She didn’t speak English very well, and my Farsi is even worse! But apparently the cool vegetables have an effect on your internal “thermometer” and can cool you down! Plus it tastes soooo good!!

The reason it makes you feel better is because you were suffering from heat exhaustion and you were probably dehydrated. The salad gave you fluids and electrolytes... Which made you feel better. And a lot healthier than a Gatorade or other sugary electrolyte drink.

@@Kymberlee_W Well, thanks! That’s good information to have. I was born without the ability to sweat, and anything over about 70 deg. just wipes me right out. I have things I’m *supposed* to do (like stay in the house 🫢) but you can’t sight see and shop in the house!! Thanks again!

I just made this today and I was absolutely blown away by the flavor! I turned it into a full week of lunch meal prep by mixing it with 16oz of cooked pasta and 2lbs of diced chicken thighs portioned out for the week. This will definitely be a go to for the summer months!

So, I am an amateur cook and Father. I try to expose my daughters to all sorts of world foods and I like to wow my wife with new tastes to keep her thinking that I am special enough to keep!! This worked...I think!! Very refreshing and full of flavor! I used fresh mint and Italian parsley (half of each of the bunches or packs I purchased), Sumac is a must and wasn't hard to find. Made this with some rotisserie chicken thighs done in a cumin and yogurt marinade and wow! We enjoy tabouli but this salad is our new go to! Thank you my dear and keep teaching us!!! Cheers

I grew up in Central California where we have a fairly large population of Armenians, Persians and from other Mediterranean countries. Most came to farm as our climate is Mediterranean. Since childhood I've eaten variations of this. Basic version of tomatoes cucumbers and red onions, chopped fine like this, sliced, thin or thick, or chopped in big chunks. Sometimes seasoned, sometimes just salt and pepper. On a good day with feta cheese. It was always just called "Summer Salad" most of the time for simplicity. I've been making it every week this summer. If you have this in the fridge you are minutes away from a meal. Chop some lettuce, throw any canned beans on it, garbanzo are especially good, then spoon as much of this as you want on it. So refreshing on a very hot day. I'll add some sumac.

You’ve gotta be kidding. Considering that the first dozen or so times that I ate this, it was prepared by and served to me by Arabs, and they called it Arabic salad, I’m pretty comfortable calling it that. Lots of variations on this recipe but as long as it has tomato, cucumber, lemon, salt, and olive oil then I will enjoy it regardless of what it’s called. I like a bit of Aleppo pepper and black pepper as well as thyme, oregano, parsley, and sometimes basil. A touch of onion if I have a sweet onion available. I’m definitely going to try the mint though.
