I love white asparagus too, but here in the US, green asparagus are much more common than the white ones. When asparagus are in season, I would probably end up eating a couple of kilos. That might sound a lot, but the bottom part of the green asparagus is tough, only about 2/3 to 1/2 of each stalk is edible. I usually roast them in an oven with a little salt, garlic and olive oil.

You can just peel the bottom part of the green asparagus and then this part is perfectly edible, too 👌

The show is so great, makes me homesick in a good way and you are such a great host! However, we also have to mention that NO GERMANS are found to do the backbraking asparagus harvesting. Workers from Eastern Europe have to risk their health for our indulgence😔

The thicker the better in my opinion. It has nothing to do with how long they have grown- it's just the way some of them grow. When you peel hugely thick asparagus, you have so much more once they're peeled. Try a test. The thicker are so super tender and tasty!

My favorite asparagus recipe as a salad is strawberry-ruccola-aparagus with balsamico cream, with no oil added. That's really worth a try!

You can find white asparagus in the stores when they're in season for a higher price than the green version. My experience is that ours tend to be on the 'woody' side and they don't seem to have that special taste as one would expect.

It's not really squeezing, you rub the stalks against each other. If it's fresh you get a sound similar to chalk or fingernails on a blackboard.

I was curious if they would talk about the environmental damage the white asparagus production is causing. All these plastic foils have to be somehow eliminated. How? I personally prefer the white asparagus although I love the green one. But knowing that the white one causes such a problem makes me turn to the green one more...
