I love white asparagus too, but here in the US, green asparagus are much more common than the white ones. When asparagus are in season, I would probably end up eating a couple of kilos. That might sound a lot, but the bottom part of the green asparagus is tough, only about 2/3 to 1/2 of each stalk is edible. I usually roast them in an oven with a little salt, garlic and olive oil.

You can just peel the bottom part of the green asparagus and then this part is perfectly edible, too 👌

I boil them and eat them with A bit olive oil and some drops of lemon juice.

The show is so great, makes me homesick in a good way and you are such a great host! However, we also have to mention that NO GERMANS are found to do the backbraking asparagus harvesting. Workers from Eastern Europe have to risk their health for our indulgence😔

This looks so fresh and delicious. I have never tried the white variety. They are huge. Do they taste like the green ones? Thank you for the recipe.

I like to say that white asparagus tastes more like asparagus while green asparagus tastes more vegetable-ish 😅

The thicker the better in my opinion. It has nothing to do with how long they have grown- it's just the way some of them grow. When you peel hugely thick asparagus, you have so much more once they're peeled. Try a test. The thicker are so super tender and tasty!

My favorite asparagus recipe as a salad is strawberry-ruccola-aparagus with balsamico cream, with no oil added. That's really worth a try!

so the video in no way answered the question posed by the title of the video. I still have no idea why germans love white asparagus so much. No dive into what makes white asparagus different, why it is a uniquely German delicacy, or anything other than a bit of fluff. Boring.

Because it has a subtle flavour, because it's crunchy and comforting and fresh and light and it makes you feel great after the winter... Why wouldn't the Germans love white asparagus?

@@rush2112andahalf Sorry, the green one is crunchy. But the white one has some bite to it too, if it's fresh and doesn't break lenghtwise into fibers.

We were lucky to get some white asparagus in Singapore this season. Such a treat! What happened to the anniversary thermomix giveaway?

@apotia Actually there is a German-Indonesian Singapore chef who creates *sweet* asparagus deserts : Asparagus Ice Cream and Asparagus Crème Caramel. The thermomix has been given away, sorry.

@Happy Dog Yes, you can of course use green asparagus for all recipes. However, you will not fully achieve that very specific taste many Germans are so crazy about..🤪

You can find white asparagus in the stores when they're in season for a higher price than the green version. My experience is that ours tend to be on the 'woody' side and they don't seem to have that special taste as one would expect.

Did you fry them from raw or pre boiled/steamed? Do they go soft from frying, or leave them crunchy?

It's not really squeezing, you rub the stalks against each other. If it's fresh you get a sound similar to chalk or fingernails on a blackboard.

I was curious if they would talk about the environmental damage the white asparagus production is causing. All these plastic foils have to be somehow eliminated. How? I personally prefer the white asparagus although I love the green one. But knowing that the white one causes such a problem makes me turn to the green one more...
