I do get it that the hairy crab is not the kind of delicacy for everyone, the crabs are indeed extremely hard and skill heavy to shell and flay them. But for someone understand its anatomy and have really seen potential out of this delicacy, these crabs are such a delight!

The earlier this month, I was in Shanghai. My business contact drove about two hours to treat me to special crabs. Jiangsu province. (season of crabs and sugar canes) Restaurants were very large floating structures on top of lake. He said it is time for eating crabs. Steamed crabs were served and I ate about three. He was telling me how special these crabs were. In my mind, this guy gotta be kidding me. I thought San Francisco Dungeness crabs are ten times more tastier than these little ones. At that time I didn't know these crabs were that expensive. I just sent a wechat message thanking him again. Taste: nothing special, very fish smell, eggs are sweet and bit chewy.
