Unfff the amount of fresh seafood. That scallop looked so plump & juicy. I really loved the sea urchin part, the way the guy prepared them was so precise & gentle, it’s clean too. I loveeee the texture of sea urchin. It’s literally sea butter, slightly grainy (not like sand but more like mustard) salty, slightly sweet cause of the ocean, very smooth buttery as well. It’s an acquired taste to these creatures. Try them with sushi rice first before having it alone. It’s delicious. Those oysters must be so juicy & sweet, with just a squeeze of lemon.

@@rotanakhin1737 no, different oysters from different country’s taste different & are prepared differently. There is a video small food documentary explaining how some oyster types are small or big or medium, and some are either sweet-savory or salty-savory. Usually the salty-savory ones are baked/cooked more than consumed raw.

Just so you guys know in order, first were exclusive Japanese scallops, then sea urchins, puffer fish (poisonous) but if done professionally, it is safe. Somewhat baby octopus (can be eaten raw like Koreans), oysters, more sea urchins, blood cockle (I prefer cooked), but all of these shell fishes are absolutely delicious & succulent.

Scallop grilled scallops are a local dish that is handed down mainly in the Tsugaru and Shimokita regions. Also, in Kobe, there is a stall specialty "Ogai no Tsuboyaki" which is a taste of the common people along with Hatsumode and Toka Ebisu. If you don't mind, please try it.

That was really hard to watch :( he is probably use to it. However that can lead to disease if something should get into the cracks of his hand :/ that is one reason I prefer sanitation/gloves.
