I really enjoy making sauerkraut, I have a couple buckets that I use that the top is a perfect size for the plates I have. I shread the cabbage, mix with canning salt, pack it tight in the buckets and use a quart jar of water to hold the plate down. I stir it every few days and taste it till it tastes good. I then can it so I can use it for pork roasts since that's how I like it best.

I use exclusively Ball and Kerr jars and find them to still be great value. I use ball jars for my bacon grease to keep in the fridge and pour hot grease on the top right out of the refrigerator and it doesn't ever crack. I pressure can meats, too. I've never had a jar break canning. I was able to find some Anchor Hocking jars at Walmart but they only have the half pints. They were good.

Yeah jars cracking is rare, but I does happen when you put back hundreds of jars every year.

@@frugalprepper I've been canning for over 50 years. I've only broken jars when I drop them, and now that I'm older I do drop them more often. I pressure can meats and soups. Chicken thighs are on sale for 89¢ a pound so I'm canning bone in this week. Good jars last till you drop them.

I never knew Anchor Hocking made canning jars. Live in canada so will investigate.
