There are companies that have invested a significant amount of resources to make you believe that you need to have a specific shape of wine glass for every wine style or even grape variety. However, unless you are someone whose salary depends on how many glasses you sell, it really makes no sense. Let's find out why and what you really need to look for, when choosing a perfect wine glass.
Some of my favorite WINE GLASSES:

Good video and thank you for being honest. I've led hundreds of wine tastings, and my position is similar to yours. You only need one or two good glasses for every type of wine. I get a lot of pushback and disagreement from people who have been to Riedel tastings. Or they own 20 different types of Xalto glasses. If you love wine glasses and you like to collect them, that's one thing. But you do not need multiple glasses to enjoy your wine. One, or maybe two, classic styles will do the job. Cheers and congratulations on the great channel!!

I had an a-ha moment recently when, because the host did not have enough flutes to go around, I was served a basic German Sekt in a wine glass instead. I was astounded as to how much aroma the Sekt presented. I never experienced that with flutes. I will now only drink sparkling wines from my Gabriel Glas universal wine glass, which is my go-to glass when drinking good wines.

Good show. I'm a retired wine salesman (old school). In the early '90's, the company I was working for hosted a seminar with Georg Riedel, we had just started carrying his stemware, and one of his major points was that your palate had taste zones. Well, I thought that just explained everything!! That said, I still use Riedel Overture red as my house glass. Enjoy your channel.

Yes, indeed, I have attended several seminars hosted by the members of Riedel family or their employees. Those are fun, especially the fact where they allow to keep the glasses, but the theory doesn’t add up for me. However, I do think their glasses are great and I do use them a lot, not for the reasons they market them though. 😅😉

I’m a huge fan of universal glasses for most wines (I’m a big Gabriel Glas fan). The only exception is fine Pinot Noir, it seems to me that universal glasses just don’t allow Pinot to express itself like a big bowled Burgundy glass does.

@@NoSediment One of my wine trade clients has taken me to 67 Pall Mall a few times where the house glasses are all Zalto. I'm not sure if the experience is enhanced by drinking from such fantastic glasses or worsened by the sheer terror of drinking from something that looks like it would shatter if I even just looked at it the wrong way.

Great video! When I was looking for new wine glasses and liked the look of the Zalto denk'art, I bought one of each (white, universal, bordeaux, burgundy) and tested them with various wines, the same wine in 4 different glasses. After all I settled on universal and burgundy glasses. The white wine glass only worked with really, really light whites and the bordeaux glass has such a wide opening, it was sometimes hard to pick up aromas. I use the universals for champagne, white, and most red wines and the burgundy glass for pinot, nebbiolo and barbera wines (which are my favourite grape varieties)

To notice an aroma its concentration must be higher than its detection level. OAV Odor Activity Level (concentration/detection level) must thus be higher than one. The detection level of an aroma depends on its molecular structure which we can not influence. But we can influence the concentration of aromas in a glass. E.g. by increasing temperature or as I have shown below optimize the geometrical shape of the glass. To detect aromas the important factor is to reach a high concentration of aroma molecules in the glass. When we inhale through the nose the concentration should be as high as possible i.e. number of aroma molecules per cm3. I have found that the important factor is the ratio between height and diameter. My research has shown that the diameter should be at least 80 mm and the ratio should be around 1.5 to maximize the aroma index. (To detect color and taste in another thing.). Aromas evaporate from the surface of the wine and on the sides if we swirl the glass. We can calculate the area and assume that each mm2 releases a certain number of aroma molecules. We can also calculate the volume of air in the glass. The concentration of aromas can then be estimated as an aroma index = evaporating area *100 divided by the occupied volume. We want a high concentration. A glass with a diameter of 200 mm and a height of 120 will have an aroma index of 2. The aroma index for a glass with the same height but a smaller diameter will be 5. Thus the small glass will have a higher concentration of aromas per volume unit and that is the important criterion for our receptors in the nose. More than twice as much. Making it easier to detect aromas.

I think for each aroma there is a detection threshold.

Kind of agree with most of what you said. I have some Riedel, Zalto as well as the new-ish Spiegelau Definition. Usually when I'm not sure I just pick 2 or 3 glasses, pour a bit of the wine in and smell and taste which one suits this one the most. Incidentally the Riedel Veritas New World Pinot Noir goes amazingly well with barrel aged Russian Imperial Stouts.

Before starting wine appreciation, I had laying around beer snifters (~330ml) and brandy glasses (~750ml) as well as flutes (for Prosecco and Cava). The first two types (with stems and clear-colored) have worked quite well for enjoying still wines, particularly since they are mostly of the aromatic white and bolder red varieties. They have also had the added bonus of being relatively sturdy quality.

The thing that got me on the wine education track (I have a NWS somm1 and a WSET L2 AW) was the difference between drinking Marlborough Sauv Blanc from a "standard" wine glass vs a Sauv Blanc glass. My friends and I found it to be a better experience/taste drinking it from the sauv blanc glass, and were quite surprised to know it was the same wine in both glasses! This not only started my path as a wine nerd, but also as a fan of using different style glasses depending on what I am drinking. With that said, I tend to drink sauv blanc, and other aromatics (including riesling) out of sauv blanc glasses. Sometimes fruity reds out of Burgundy glasses. And everything else in Gabriel Glass "standards". So I suppose I have my likes when it comes to glass styles, and am a believer of it making a difference... but at the same time, am pretty lax about it with only three styles of wine glasses in my house. (not mentioning the ISO tasting glasses) Thanks for this video, Agnese!
@NoSediment
@NoSediment 10 ай бұрын
It is so interesting that You say that, because at WSET all the wines are tasted from the same glass in the classrooms and at the exams. I have always had my doubts about the glasses, and this was the environment where educational force finally said it out loud. 🙏🏻🙏🏻🙏🏻 But as I say in the video - we should enjoy wine from whatever wine glasses we prefer the best, and if we feel like having different glasses (for whatever reasons) we should. Thank You for Your insightful comment and cheers! 🍾🥂

After trying lots and lots of glasses, my opinion is that you can * get away* with one glass, but ideally you should have two. You definitely don't need more than that. I like the Zalto Bordeaux + the Riedel Performance Riesling (if I had to choose only one of these, it would be the Zalto). I also keep a set of cheap glasses around for company and for when I don't want to break out the fancy crystal. So 2 nice glasses + a set of cheap ones.

I think You are absolutely correct. I made this video, more as a theoretical idea, making sure that I tackle the issue (which is selling/marketing based in half truths). But I have many wine glasses at home, and I use them all. And if person wants to have a wider glass for Pinot Noir style wines and narrower for whites, it is completely fine and reasonable. Though At professional tastings I always get away with only one style of glass, and have never seen anyone bringing several wine glasses for each style. 😂😂😂

If I have a girl over for a nice dinner, and serve 2 different wines, I really feel having 2 different shaped glasses is a nice touch. Of course it isn't necessary. Stemless glasses are great for dishwashers, every day wines, and not getting broken as easily by kids and pets - they aren't for special wines or special occasions, but they are worth having. The temperature argument is valid, however I only hold a wine glass for long periods of time in a social setting - enjoying a glass of wine by myself, and I set it down unless actively drinking. It wasn't mentioned, but you should experiment - does cab taste the same or better or worse to you in a Burgundy glass? This is the biggest reason to buy or not buy a different glass.
@NoSediment
@NoSediment 9 ай бұрын
Of course it is a nice touch, I would be very impressed if my date would have two different shaped wine glasses for each wine. 😉 I hope it tastes the same, as I do my exams always with the same glasses, as all of the students, for all the wines. I am not arguing against the difference in aroma, but for taste - if we swirl wine around in our mouth so it touches all the tongue, there is no reason it should taste differently. 🤔🤔🤔

Well, I use many wine glass brands, the top would be Zalto, Riedel and Lehmann. And yes, some champagne wine glasses will have a mark at the bottom, for bubbles to form. I don’t always look for it, as it is not critical for me. (+ if You use Your wine glasses actively those scratches will appear naturally with time 😅😂). I find it more to do with the size and opening of the glass. Smaller opening is better for less aromatic wines to concentrate aroma. Larger glass makes some wine rounder and fresher. Maybe it’s due to the volume it delivers at each sip? This is comparing the King decorated goblet, mafia small round globe, iso glass, Cab glass, pinot bowl. I have a question though. Do heavy oaked whites fare better in a wider opening Cab style glass? To dissipate the oak and review the fruit maybe?
@NoSediment
@NoSediment 10 ай бұрын
It is very difficult to answer Your question, because we all do not perceive aromas the same. So what for one would be intense, for other would be mild. Therefore, I didn’t talk about the specific wine glasses or shapes, as we each might have our favourite ones, and that is fine. Regarding the taste though- each of us of course also have own unique experience, but I forget to note one thing - if we taste wine the way they teach You in schools, allowing it to cower whole tongue, teeth and gums, then we should get whole picture, no matter what the vessel we are enjoying it from. 😅

I have fun with the aesthetics of wine glasses, and have fun with variety for that reason. The only real debate is with bubbles: do you go for more aromatics, or more of a flute to see the bubbles travel? For a quality champagne, I take the tulip. A value Prosecco, maybe the flute.

I’ve heard this before about not using stemless glasses because you don’t want to warm up the wine. Really? How long touching a glass would it take to noticeably warm a glass? When you drink cold milk or orange juice in a regular glass, does it come to body temperature? I have trouble believing that wine will warn up in the time it takes to drink a glass.

As opposed to a juice or milk, wine glass is usually not finished within few minutes. And while at the restaurant You might have option to place Your glass of wine on the table, when You are at the wine tasting or even simple party or gathering - You might spend most (sometimes all) the time standing with that glass in Your hand. Never liked Champagne flutes. Always seemed too condensed and narrow. I only use my coupes for cocktails. I do like the modern Champagne glasses that have a larger bowl but taper to a smaller opening. This way one can safely swirl their champagne and release the aromas with minimal scent escaping. Also appreciate nucleated varieties to aid the “pearls”. White wine glass of course works equally well, but it’s like attending a dinner function in formal attire or sofa loungewear… the food will taste the same, but the formal attire symbolizes the event as special, celebratory. Nobody, yet, attends weddings in pajamas. We place significance on the emblematic

Saying that I also have a small number of their Bordeaux and Pinot Noir glasses which I found for an incredibly reasonable price (5 British Pounds for two) at a local discount store..Bargain!.

We had a wine 'tasting' experience several years ago at a winery where one unidentified wine was poured into different shaped stemware... For some odd reason, the same wine smelled and tasted different from the different glasses.. My wife, who is NOT a wine drinker, even participated and concurred with the results.... Why is this the case ? I have no idea !

Well, I will never argue againts different aroma. :) but if we taste wine the way they teach You in the wine books (swirling throughout all the palate, tongue, gums) there is no reason wine would taste different - no matter the vessel You are drinking it from. And then there is a power of word. If in front of You is someone who is moderating the tasting (and selling wine glasses) they will talk and lead You to believe that there is a difference. 🤷‍♀️ 😅😅😅

I kind of disagree with the main synopsis. While universal Bordeaux shapes are ideal for many wines and even champagne, for Chard and Pinot large burgundy shapes (such as Zalto oder Josephinenhütte) are the way to go imho. So 2 glasses it is.

What I want to say is that let’s use whatever glasses we want and like our wine to be enjoyed from. We are paying for the wine and it should be enjoyed the way we want it! Easy as that! 🙌🙌🙌What I am against is marketing programme that is based on semi-truths. If You feel better to have choice of 2 glasses -> Great, that works as well! 🙌🙌🙌

Glass plays no role especially in taste. I could be convinced otherwise about the nose though. Taste -> if You swirl the wine on Your palate and let the wine touch all of Your mouth, tongue, teeth and gums, it literally makes no sense what vessel You drink Your wine from. I have been to many tastings organised by retailers and glass manufacturers, these are more fun than scientific unfortunately. 🤷‍♀️

There's no way you can go about such a test unbiased as you can't ignore the glasses' other properties (weight, volume, geometry, weight distribution etc.). That said, happy for you if you found your way (no irony here). I for my part agree with Agnese, and I've had my share of "glass tests".

@@NoSediment I believe to have noticed a difference with sparkling wine, Riesling, Pinot Noir and Barolo (but that is what I usually drink). My regular glass is labeled "Universal" by the manufacturer and I switched to a champagne glass and a wider (for me Pinot but manufacturer calls it Bordeaux) glass and I thought they are better fits (smell and taste), but I will continue testing the hypothesis.

@@cyranotu People who claim that glass makes no difference assuming the basics (large bowl etc.) are there should do a simple tasting test. After reading up on Riedel and how glasses don't matter, just for the fun of it I've done just that -- same wine, just different glasses -- and the experience was shockingly different. Not just different, but shockingly different. Then I repeated the experiment with my wife and wine friends and everybody agrees the difference is absolutely noticeable. So... Yeah, a good universal glass is fine, but if you want it all, you need a bit more in your cupboard.

@@NoSedimentaccording to your advice drink using whatever you want which also means a porcelain tea cup and since the wine will get in your mouth anyway and touch all of your tongue it should taste the same. But curious you mentioned the glass does affect the aromas but aromas also affect how we perceive taste. But at the end of the day if wine taste the same for you if its in a can, box, bowl, wine glass or sippy cup its ok as long as you are enjoying your wine. 😊

Well, I don’t advertise wine glasses, and don’t get paid for anything. Therefore, I can only share which wine glasses I like the best, but it can be different from what You enjoy the most. When we are talking about how wine glasses shape the flavours (which is not true) we cannot talk about the aesthetics of them, which in my opinion is very important. Wine glasses truly have absolutely nothing with taste, however if you really understand vine you can smell different in glasses for yourself and if you understand chemistry of vine, then you now that if you put riesling in Burgundy glass aroma will be gone in 10 minuts and if you put pinoit noir in Shyraz glass or some white whine, then it's gonna take much more time to "wake" aroma. But it can't be something surprising, every somelier knows that oxingen have huge influence on aromatic of wine.
