I’ve made Mac n cheese from scratch a lot but never tried blending the sauce before today. Never skipping this step from now on. Totally changed my world

Isn't the reason that Velveta works that it includes stabilising salts? You can just add sodium citrate to your cheese mix and make the most epic Mac and Cheese with absolutely phenomenal cheeses of your choice and never worrying about them splitting.

This. Velveeta has way more of that stuff than it needs, so it makes any added cheeses smooth even if they're normally terrible at melting, like cheddar. Also works when you mix an American cheese slice into a grilled cheese with difficult cheeses.

@@cobaltchromee7533 which is exactly the point. Velveeta isn't a good cheese, it just has some of the magic powder in it. Why work with the middle man instead of just adding powder yourself?

My only issue with Velveeta is how much oil is in it, I can't process oils and fats that well and the taste is never worth the sick. If I need creamy I add cream of mushroom to a good aged cheese with a small spoonful of plain greek yogurt for twang. It will give you an excellent cheese pull and full flavor every time. My family's secret ingredient for mac and cheese is onion powder. Idk why but adding onion powder is like adding love to the food.

Onion in general is a secret weapon for making stuff taste awesome. Beans taste like dirt without onion and like the only thing you ever want to eat when you include it.

Just use very thinly minced onions and use your oil of choice to make them gold before adding the milk and onions, for example. It won't be the same, maybe you won't like it as much, but I'd say it's worth the try.

I'd make a white sauce and just add cheddar to it......I also found adding yellow curry powder, 1 teaspoon for this recipe pops out the cheese flavor better

The basic recipe for mac and cheese is to add pasta to a mornay sauce which is just a flour and butter roux with milk and cheese added. Cooking the pasta in the milk subs the pasta starch for the flour, but they're both wheat starch so it's the route not the destination that changes.

The pasta that he jokingly referred to as tortellini is actually cavatappi in case anyone cares. A better choice I think is radiatori, Google it and you will understand.

ummm actually its trottole, and this can be proven if you pause on the frame where he shows the bag and also cavatappi isnt as compressed as trottole is as cavatappi is generally longer and more stretched out

Heres a tip, you can skip the velveeta and add sodium citrate. Essentially this is the stuff that makes american cheese the way it is by allowing the cheese to hold more water, you will get the texture you want but with entirely whatever specific cheese you want to use.

If you're cooking with teflon cut pasta you should stay consistent and use a teflon coated pan. Otherwise the elbow pasta could snap off or the kraft sauce may even break.

I like to mix cubes of good cheddar into the elbows, then pour a Velveeta sauce over it and bake. That way you get random naughty bites of sharp cheddar that really slap your azz. 😎

@calebangell77 It's aged, so it's safe. for the aging part, they like wrap or package the cheese very well and put it in somewhere so it doesn't do bad. Once they expose the cheese, that's when it starts to become bad but not right away, obviously, so its 100% safe

Velveeta cheese is a rip-off. It's just sodium citrate and cheap cheese. Just buy a bag of sodium citrate and never buy Velveeta again.

Or get citric acid and mix it with sodium bicarbonate (11:13 by weight) to make your own. Now you have a more versatile starting ingredient (citric acid is good for making sour gummies and rimming drinks and whatnot).
