Should measure the steak before salting. Not sure if you did but if the pre salted steak lost water from the salt then it wouldn't be accounted for

I went to culinary school for pastry arts and i actually found it pretty useful getting introduced to foods and techniques I had no experience with. But I could understand that for culinary. A good chunk of the culinary side was learning the names for things I already knew how to make.
