Spot on👍 I noticed same thing with my s21/22/23 ultras. Probably it is some kind of picture optimisation because sensor seems ok when taking raw images as you found out

s10 has the same issue with overexposing red tones. It has to do with sensor tech. Each brand has also its own color grading style. And mobile phones are commonly used to photograph humans. Iphones tend to have more yellow skintones, samsungs fotos, skintones and faces are often brighter and have more contrast/saturation. I recently photographed a saturated red pillow on my s10 and the red was way too yellow, greenish and oversaturated. When photographing a ferrari red, you notice it the most ;-) Skies/Blues are also more neutral and correct on the iphones compared to samsung.

Excellent video, i think its because Samsung oversaturate all colors to make them pop but it seems like the color red is most effected, this also continues with the new released Galaxy S24

Red and yellow is samsungs worst enemy and they seem to be the only android phones with this issue they need to fix that with a software update they over expose red and yellows..
