I went to Brazil 🇧🇷 last year from Philippines 🇵🇭, and when I was in São Paulo, I had this tapioca snack almost everyday! I love it with lots of cheese! There was this sweet lady selling them outside of the Shopping Cidade mall in Avenida Paulista, and I always bought from her! Those simple things including Pão de Queijo are what I miss about Brazil! Now that I am back in my home country Philippines 🇵🇭, i have learned to make the tapioca crepes and Pão de queijo myself! They both use the same ingredient which is tapioca or cassava flour, which I am thankful they have in my country! It’s like I can get to taste a slice of Brazil 🇧🇷 in my home!

A tip: If you mix three tablespoons of tapioca and an egg, you get a kind of batter that is very reminiscent of a standard crêpe, but with no dairy and no flour. As the beijú, it's also very neutral in flavor so you can make savory and sweet ones. I like adding spices and grated parmesan cheese to mine.

I love this, my grandma used to do this all the time for me! She, therefore I, call it beiju and eat only with a thin layer of butter, instead of meat, chocolate or any other fillings. The fillings are actually very odd to me, can't quite like. Just butter is best. And not too thin, nor thick, if the beiju is too thick, it's too chewy and harder to eat, if thin, it's just not that special.

Just a few notes about beijú and tapioca. In some regions of Brazil, especially in the Northeast region, tapioca crepes are called simply "tapioca", not beijú. The word "beijú" in these places refers to another cassava product, something like a hard cassava flatbread, unlike the tapioca crepes, which are flexible. Another thing, what you guys call tapioca is cassava starch, which is a very fine and white powder. It's obtained from a liquid that's drained from peeled and shredded cassava root. That liquid is full of starch and goes to a container, so the starch will sink to the bottom. At this point the water can be drained and the white starch that remains is the cassava starch, called "goma", "fécula de mandioca", "polvilho", among other names in portuguese. Tapioca crepes, also called tapioca or beijú (as they are called in the video) are mode from cassava starch. But the beijú I mentioned earlier, which is a hard flatbread, is made mostly from cassava flour, which is grainy and kinda sorta reming you of bread crumbs. That shredded cassava, after drained from most of the liquid, is cooked on big pans until it's completely free of moisture. That's the cassava flour or "farinha de mandioca" in portuguese, which we use to make this hard beijú flatbreads, but also "farofa", a staple side dish in our region. You have no idea how many foods can be made out of cassava starch and cassava flour.

I' really don't know your experience about Brazilian Northeast but, here in Salvador and across all Bahia state, "Beiju" allways been "Beiju". 'Tapioca' is the ingredient. If u ask a grandmother from northeast for 'tapioca' she'll ask "what for?" cuz you can make a big amount of different recipes with tapioca despite the youngsters're forgetting this after 2000's boom of "tapiocarias" in the major cities So...
