These three delicious game day, night in or Pub food small plates will make any home cook or chef's restaurant menu sing.
Doctors and whole food plant based fanatics find me controversial for this but I'm a chef and as much as I do love to eat healthier I enjoy crispy culinary treats like this occasionally. We make flavor the priority in every dish created.

Recipe: Three crispy small plate dishes inspired by Izakaya style pubs:
ALL USING OYSTER MUSHROOMS Instead of Chicken
Spicy Hot Fried Mushrooms
Marinade:
• ½ cup spicy hot sauce
• 1 tablespoon garlic, paste
Batter:
• 1/2 cup cornstarch
• 1/2 cup all-purpose flour
• 1/2 tsp salt
Instructions:
1. Marinate Mushrooms: Toss oyster mushrooms in hot sauce, garlic, marinate for 30 minutes or over night
2. Prepare Batter: In a bowl, mix cornstarch, flour
3. Fry: Dip mushrooms in batter and fry in hot oil (around 180°C / 350°F) for 2-3 minutes per side until crispy and golden.
4. Serve: Drain on paper towels and serve hot with extra spicy sauce.
Teriyaki Style Fried Mushrooms
Marinade:
• 1 cup soy sauce
• 5 Tablespoons Dark Soy Sauce
• Splash of brown Rice Vinegar or Rice Vinegar
• 2 tbsp brown sugar
• 2 Tablespoons Mirin (optional)
• 2 garlic, paste
• 2 Tablespoons fresh ginger paste
• 4 chilies, diced
Batter:
• 2 -3 cups potato starch (as much as needed)
Instructions:
1. Marinate Mushrooms: with mixture and marinate for 30 minutes or over night
2. Fry: Dredge mushrooms in the starch mixture and fry in hot oil (around 180°C / 350°F) for 2-3 minutes until crisp.
3. Serve: Drain on paper towels and use teriyaki sauce to dip if desired.
3. Pickle Buttermilk Fried Mushrooms
Marinade:
• 1 cup pickle juice
• 3 cups Soy Milk unsweetened
• Sage, thyme and rosemary sprigs (optional)
• Salt and pepper to taste
Batter:
• 1/2 all-purpose flour
• 1/2 cornstarch
Instructions:
1. Marinate Mushrooms: Submerge mushrooms in pickle juice and vegan buttermilk for 30 minutes or over night
2. Prepare Batter: Combine flour and cornstarch.
3. Fry: Dredge mushrooms in the flour mixture and fry in hot oil (around 180°C / 350°F) for 2-3 minutes until golden and crispy.
4. Serve: Drain on paper towels and serve with a pickle garnish.

I'm mostly WFPB, & always vegan. I think most plant based doctors would cut you some slack & probably love you too. These deep fried mushrooms would definitely be a treat for us all!

The warping is the wood absorbing the moisture from the foods you cut, the humidity in the room and the from the wet towel. A guitar neck does the same thing from the humidity, only much more slowly, but has a compensating mechanism you adjust called a truss rod. Your strategy of flipping the board allows gravity to relax the wood fibers to settle back to neutral before they warp back the other way from moisture again.

The warping is because of uneven water absorption and drying. Wood fibers expand as they absorb moisture and shrink as they dry, so if one side of the board sits damp for long enough it'll grow bigger than the dry side which causes the bow. I prop my board up at an angle after washing so both sides can dry evenly. I've left it sitting on a damp towel over night a couple of times which left it with a big bow. I fixed that by laying a damp paper towel on the concave side until the moisture content evened out and the board flattened itself out, then I stood it up to dry like normal

Another fantastic recipe and very entertaining video! Although I shouldn't have watched it on an empty stomach, I was drooling like Frankie! I completely agree with the other commenters. I’m a plant based chef from California who is now in Ecuador. I have been in the plant based space my whole life. And for the last decade I’ve done whole foods, 8-free foods, foods free from the most common 8 allergens. Here in Ecuador, the herbs and spices are different, the things as plant based people have access to aren’t the same as I am accustomed to; in California I can literally source every ingredient and have a hundred options of places to eat or get cash and carry eats. Here, it is very limited. So I’ve started breaking the rules. I’m making seitan and vegan cheese from scratch. All the ingredients I can source here that are plant based are fair game. And I’m having so much fun.

I really enjoy these videos! I have been a vegetarian since 1980’s (I met a beautiful cow) and mostly vegan for the past 4-5 yrs. I have tried so many of these recipes, not as good as Derek. Frankie is just so adorable and beautiful.❤🐶

With festive season looming ahead, these shrooms would be a perfect addition🎉. Love the Frankie thoughts and comments. Oh and the drool, just a small treat dad. I can imagine all the work that went into producing this video, so a big thank you. You inspire me to think out the box. Got me thinking of the days, when I enjoyed salt and pepper calamari. No longer of course. With some Enoki mushrooms, nori seasoning salt, pepper and a sprinkle of cornflour, deep fried, could work. Take care and looking forward to making these decadent mushrooms. A note on wooden chopping boards - and I mean big, heavy dudes - we got a length of beech block work surface, cut it into chunks, sanded, bevelled the edges, coated in food-grade wood finish (Osmo Top Oil is the bees' knees, or the dog's bollocks as we say in UK) and you can make your own boards to fit plus extra for really super gifts for friends. Hang on...there is a business here...

I put little rubber feet on the bottom of my big wood cutting board so moisture can evaporate if it gets underneath. It hasn't warped since.

The warping is because when you cut on the cutting board you also remove parts of the wooden surface. Since the wood is organic material it moves a bit of you leave it alone and "heal" a bit. By those two things cause the warping.

I enjoy watching you so much and you enjoying your food. It’s so awesome that they were able to transform a chicken farm into a mushroom farm. I’ve always enjoyed having chickens around. But not for eating. All the chickens and babies I had I got them to live out their lives with no worries whatsoever. One day I’ll get some growing kits and grow some mushrooms.

These particular boards warp because of the cut of the wood. Cut in endgrain blocks like you have may be easier on the knife edge but are weaker in strength, depending on a lot of glue to hold them all together. Shorter grain lengths eventually split apart, particularly if they get wet without drying immediately.

I bet the Izakaya's in Vancouver are awesome - but... If you ever come to Japan, it's nearly like heaven. I say nearly, cause they do a lot of traditional Japanese foods, which means lots of fish (and meat) dishes. This doesn't mean there aren't plenty of edamame, tofu, veggies, fried whatever dishes too. Plus beer, sake, chuhai, etc. Best part is that Izakaya's are so steeped in Japanese culture that just visiting them transports you deep into an epic aspect of Japanese-ness.
