It’s a stupid excuse that someone made up to explain flaws in the original film. If you pay close attention to Vader vs Kenobi in EP IV you can see his lightsaber blade changes length in some shots. It’s barely noticeable and it only happens in this particular duel

The Sith have to go to a hostile planet to mine for the special dark-side crystal. The color of the lightsaber is governed by the crystal(s) used while constructing the lightsaber. Jedi’s have to go to certain planets depending on what crystal they may want to use. Mace Windu’s saber is purple mainly because he has full mastery and can tap into either side of the force, if it is for the cause of good.

Idk who is Kanan but every lighsaber has adjustable length actually but you have to do it manually and you cannot do it during battle. Vader put two kyber crystals and adjusted their lenght making one longer and one shorter so he just needed to switch from one to another

in Legends lightsabres could take up to three crystals, and the number of crystals didn't give the sabre the ability to be dual-phase. In Legends, you can tailor your sabre by adding crystals.
