Hey Liz cnt tell u how much I luved this video ... I never even try to bake volume recipes a total waste of time and ingredients .... I live in Australia and I ended up buying US spoons as u said and my life changed.... our spoons and ur spoons not even on the same planet ... thnk u for explaining to everyone that weights matters and only weights is how u bake things for success ... can u imagine trying to make macarons without weighing wat a joke ....I make cakes as a business so no scales no baking ... huge hug from dwn under.... You are truly blessed with the amzing talent god has given u ... thnk u thnk u xo

I've been baking for years with measuring spoons. I convert the weight in grams to the measuring spoons and it works

I only use a kitchen scale...I loved chemistry n college and realized this is baking? And so I approach my baking as a science...I was so happy to watch ur show on “there is, A “Difference in chocolate and their ingredients, i.e butter fat, weight of cocoa, etc. “ it opened my eyes to why some of my expensive chocolate wafers both white, milk, dark, etc...I use guttiard chocolate more than Belcolade...I love them both...I also like Garideli chocolates...thank u for the info... helps so much...now back to the truffles, rum balls, and my yummy yummy buttery toffee crunch. I cover both sides with chocolate and chopped nuts. Take care and bless u all for the holidays.

Great video. Unless you have very good scales or special sensitive ones, which many people don’t have, then it is more accurate to use measuring spoons for small amounts than try and weigh it on a standard kitchen scale that goes by the gram. This is why UK recipes have the large quantities listed in grams and the small amounts, like vanilla, salt, baking powder etc listed in TSPs and TBSPs. Hope this helps. Just bare that in mind if you’re from the US and you have just been introduced to kitchen scales. If you have a standard scale, still use the measuring spoons for small quantities or buy an additional set of special half gram scales I think they call them. You need special sensitive scales that measure in 100ths of a gram to weigh amounts like that accurately.

I live in western Europe where every kitchen has a scale (and an immersion blender). When pinterest arrived suddenly baking shops carried cups (and blenders) so that we could bake those American recipes. I think cups are so annoying. You need to clean constantly and you never know if you measure the same way. And how can you fit cold butter in a cup? It's not even liquid. I do have cups and measuring spoons. But when I like a recipe I write next to the cups the amount in grams. That way I can just measure 'the normal way' (for us).

In the UK we always use weight measurements and I find it really frustrating when I see a yummy looking American recipe in cups, try it using a conversion chart, and it doesn’t turn out well. I have 2 sets of cups but they don’t measure consistently 🤔

I have 2 kitchen scales and never knew the correct way to use them…..what is a tare……I finally know what it is. Makes my baking so much easier….and I’m almost 70 years old…a lifelong learner….lol

I dislike using cups. I do wonder how people use cups to measure butter especially. So time wasting and messy. Scales are way better. Thanks Liz.😘😘 Can't wait to see our cake baby😍😍🤗🤗😘😘

I absolutely use scales. I'm a believer. I have 3 so I can weigh out pans of batter......think that's OCD?!? I'm good with that!!🤣🤣

I’ve been using cups, spoons & measuring jars & whatever I bake they have been pretty consistent never had an issue 🤷🏻‍♀️

Thank you thank you thank you... This has gotta be one of THE most useful tutorials I've ever watched- I've lost count of how many disastrous conversions I've tried from USA cup recipes to my lovely UK scales... Latest was some gf cupcakes which blew up my hand mixer cos they were so solid. Tried a2nd time without converting and they were superb. Google has a lot to answer for 🤪 Only thing you didn't mention was the dreaded grams.... I'm still using lbs an ozs but the darn things are creeping in.... And i truly did not know that spoon sizes were different depending on where you live. I'll watch out for that in future especially with baking powder and soda! Thanks again an I hope they don't weigh that lil baby in cups 😉

I loveeee you channel and recently tried your vanilla cake and easy buttercream recipe. The flavoring was great but my measurements were off! Then I found this measurements video and now understand where I went wrong! I need a good scale! Can you also relink the measurement conversion on your blog the link no longer works. Thank you!!!

i use a scale, my husband will use the dry cups for everything including liquid it drives me crazy! at least use the correct measuring device if your not going to use a scale!

Hi Liz ! I have printed off 2 different conversions charts and the majority of measurements are different? Joy of Baking and Gemma both are different. I dont know what chart to go by maybe just the recipe? I was wondering if butter cold or soft measures different and then confectionary sugar or flour sifted first weighs different? And if it says sifted flour do you sift first then measure or measure first then sift. Sorry for all the questions Thanks Liz

Hi Liz ! I was wondering if you could recommend a accurate scale for baking? I had gotten one from amazon a while ago but it doesn't read a cake mix or butter to what they are suppose to be? Can you suggest one for me please. I like to make your white velvet cake but afraid that my scale is off to much. Please help. Thank you

I am American and my mom taught me how to bake. She used grams and milliliters. I depend on my scales! I have so many recipes that even though everything is measured in grams, they still use teaspoons and tablespoons for baking powder, soda salt etc... Plus, my scale measures milliliters AND milliliters milk, which are 2 mls less -more (can’t remember but it is a couple mls different) Help!!!!

It is actually more accurate to use measuring spoons than to try and weigh tiny amounts on a standard scale. You’d need very sensitive scales to weigh 2 grams of salt, for instance which is about 1/2 tsp.

@@Thesweaterfactory thank you for your help, it means a lot when we baker’s (and scientists) can answer each other’s questions 😊 I use my scale on a daily basis and was hoping I could weigh everything. I forgot that I have a fancy and sensitive scale from chemistry class (that measures (example) .5 grams. Since it is still in the box and never used, I should be able to use it in the kitchen. Like you said though, I don’t mind using measuring spoons. I found an old set when I moved and not only did it give the tsp and Tbsp amounts, it also gave gram measurements. Sorry to ramble about the subject. Since I posted my original question, I have been using spoons to measure and it doesn’t bother me. Cups on the other hand, I use as canister scoops 😂

Yes but what if when adding in one bowl you for example add two liquids and you add more than you should’ve and you need to remove some. It would be hard to know remove it once they have mixed 🤷🏻‍♀️ All of my spoons show 15 ML. It says online that it is the US standard. I guess they ditched the 14.8?

Grams are the most acurate but oz at a pinch and I'm used to both. Volume not the way to go

I sift a lot of my dry ingredients. Should they be weight measured before sifting or after sifting?

It doesn't matter, sifting doesn't affect the weight measurement :)

Uhhhh did anyone else realize she fudged the weight difference on the chocolate chips. She said 7 oz for the minis when it was 6.8, .2oz could be a difference

Ounces get subdivided into decimals instead of freedom fractions? But you still use pounds and ounces instead of kilograms. I don't get why a basic scale claims to measure volume. It would take a smart scale to recall the density of oil or alcohol. Otherwise the ml just duplicates the grams, and requires you to cycle through another unit.

Except, what baker doesn’t use grams? Because a scale set to weigh in ounces instead of grams, can still throw off your recipe because there’s 28.35 grams in one ounce.
