I know as a 22 y.o. I'm not that old but I can already feel a difference in behavior and what I expect in my life when I date a girl younger than me or even my age sometimes. I do hang out with a lot of 30+ y.o. people though so that might be why.

Not my experience at all. We all actually have life outside college / work. But when they are actually talking about work / studies, why not pay some attention and offer emotional support? I remember my uni days, when I chat with friends, I was always talking about video games, DOTA, playing football. During PhD, I was hiking with other PhD friends, talking about life during childhood, favourite food, restaurants in town, etc. It isn't only about studies. In fact, we hardly ever talked about our own research because our research is on copmletely different topics and it's so deep that people wouln't easily understand. So we just talk about movies and stuff, things that we may be able to share interest in.

This is good because it tells 20 years olds that if a 26+ year old person looks like they are interested in you, they're probably really immature OR they are not really interested in you as a person because they are less likely to relate to you
