It's blackberry season. What better way to make use of wild berries in abundance than blackberry cobbler. I worked in the food trades most of my working life. We used a lot of prepared mixes and fillings to speed up production, and vary menu offerings. It's sort of an open secret. In a restaurant setting, the main food items of the venue take priority when prepping for your service day.
An in-house fresh and seasonal dessert adds a sense of home and familiarity to the meal. That being said, a rapid preparation recipe is needed for last minute adds, or replacements. We've all likely seen videos of cakes falling or pies destroyed in cutting. A quick replacement recipe such as this appears to take a while to make but assembles in moments through the skilled hands of a trained Chef with an infinite variation of fillings.
Recipe:
Topping
1 Box Cake Mix
2 Cups Rolled Oats
Fruit Filling
1/2 Gal. Fresh Berries
2 Tablespoons Corn Starch
1/2 Cup White Sugar
1/3 Cup Water
1/2 Teaspoon Almond Extract
1 Teaspoon Vanilla Extract
Assemble, and bake at 350 degrees for 35 minutes.
This is a fun and versatile recipe that can be adapted to a number of fresh seasonal fruits.
