There is a special place in our hearts here at the Wilderstead for Candied Jalapenos. It's often called 'Cowboy Candy', but we call the stuff Coyote Crack - because when you start eating them you just can't stop! We add these candied jalapenos to just about everything that could use a little spice and a little sweetness. In particular, our fish tacos just aren’t the same without cowboy candy. Every time we make these, we end up with a little extra of the syrup which we can up as well so it doesn’t go to waste. It can be useful when you run out of cowboy candy, but might have a few fresh jalapeno peppers on hand. The syrup is sweet and spicy, and makes a great addition to dips, stir fries, and for marinating meat. There really is almost endless uses for the syrup, and we’d be interested in hearing what you come up with.
Some of our other peppers are ready for harvest, so it's time to chop them up and freeze them for use over the winter months.

Hi From Edmonton, Alberta. I have never heard of “Cowboy Candy” but I was inspired to try this recipe. I didn’t grow jalapeños this year, so I ran out to the local farmer’s market. Three pounds = 6 half pints. Perfect. I had enough leftover syrup for 3 half pints of syrup.

I just heard about this "candy" a few years ago. This year my friend gave me about 2 pounds of jalapeños she grew. So, 2 weeks I made this for the first time. OMG!! This is so good. I'm not one for eating jalapeños raw or cooked, for that matter, but this is incredible! Thanks for sharing this info and recipe.

You are the first person I’ve seen use your roaster for canning!!! I’ve been doing it for many years. Got a lot of hate on fb for sharing a video of making jelly in mine. I can get 11-14 jars canned using both burners and my turkey roasters. I’ve not had any problems with doing it this way. I’m going to make your cowboy candy recipe tomorrow. My husband cannot wait lol. Thank you for sharing.

You could pull up the Jalapeno plants and put them in a tote in the garage to over winter them and plant them in the spring. I’m trying it this winter to see if it’s worth it.

Loved the candied peppers! I used 2 cups of brown sugar and 4 cups white sugar. Good!!

I do all brown sugar except 1 cup. First time was accident I thoughtbi had another 10lb bag but I didn't so I used the brown sugar for replacement since I only had 1 cup of regular sugar. Fixed it per Instructions a fee weeks later. We all liked it with the brown sugar so much better. But it's still the bomb either way.

Yeah, we have a second greenhouse that we’ll overwinter stuff in. Our cabin is too small to have many plants growing inside. It’s a 3 room cabin lol. Bed, bath and kitchen/living area. Very tiny.

Had a bumper crop of jalapeños this year from just 6 plants! I’ve given away probably 10 pounds and still picked 20 lbs yesterday with more on the bushes. Looking for something to do with them all! I tried this today and can’t wait to try it!

My guess on those mystery peppers: Serrano or something very similar

They definitely resemble them. Will see how they are once they’re nice a ripe. Likely add them into some fermented hot sauce.

Serano Peppers are the smaller ones. IF you start cutting from the pointed edge its easier to finish thechop, and its safer cutting.

We've been hit by frost a few times now. We've been covering our frost sensitive plants with sheets and other materials at night, so we haven't had a huge loss yet. The colder weather is definitely on its way!

picked up a huge bag of peppers today, garden didn't grow enough. Going to try your recipe tonight. Do you think I could use others peppers too? I grew Primero peppers which I did get a lot of! Wonder what they would be like mixed together....

I'm making cowboy candy today! My husband LOVES the stuff. I've never tried it before because I don't like the heat. It's a labour of love. Do you find you have a lot of leftover syrup at the end of it? I hate wasting that much organic cane sugar!! Helps to watch the WHOLE video before commenting. Lol. Have you ever reused syrup the following year?

We’ve used the syrup to ‘cheat’ when we’ve run out of coyote crack before our peppers were ready, and bought some from the store to make it through until harvest 😂

The unidentified pepper were probably serrano peppers. A great pepper and even better if ripe. Made first batch of cowboy candy, all my friends thinned it out greatly, I'm thinking another batch is called for.

I made two batches of these up today, and I used a couple pint jars along with the half-pint ones. All were processed for 10 minutes. I had not paid enough attention to the instructions, clearly!! Do you think my pint jars will be okay or should I re-process them?

As long as they were put in the jars hot, and the jars sealed, you should be OK. The amount of sugar and vinegar in the recipe should be adequate. You might want to eat the larger jars first though. Hope that helps!

These are shelf stable. Refrigerate after opening a jar.

Looks like a serano, about the same color as a jalapeno, smaller in diameter.

I wish we could keep the pepper plants going year round, too. Hopefully the heated greenhouse we've been building will allow us to overwinter various plants in the future. Enjoy the coyote crack!
