Thank for for showing all the taste testing. So many ppl show hot to freeze dry but very few show how to rehydrate and which ways taste better. Considering buying a freeze dryer but wasn’t sure it if was worth it if the food doesn’t taste good afterwards. This really helps.

That’s how I make my brown sugar meatloaf, Jessica. I pack a layer of dark brown sugar on the bottom of a loaf pan, then layer of ketchup or bbq sauce (don’t mix it!) then my meat mixture on top of that, and that is usually half ground chuck, quarter ground veal and quarter ground pork. Let it cool for 30 minutes before turning out on platter. Your mixture would make excellent meatballs. Thank you!

There are reviews on the oil less pump. Not so good. Still needs maintenance and it’s expensive. Look into it before you buy. 🙏✌️🇺🇸

I gonna try my meat loaf recipe and freeze dry it. The only thing gets removed during the freeze drying process is water, not flavor, I would think. Maybe just add some (little) hot water to the pan and cover it so the steam helps rehydrating the food. My meatloaf recipe doesn’t have any sugar or ketchup in it. We bake the loaf first and top it with a ketchup/bbq sauce mix and bake it a few more minutes. That’s sweet enough for our taste. Love how you experiment and everyone voices their opinion about it.

Dough without yeast seems to freeze dry Ok. Then add the yeast to the dough after rehydration.

i believe when you extract water content from a recipe in freeze drying you should replace it with water --- weighing the start product and subtracting the freeze dried weight will suggest how much "water" to replace when rehydrating/reconstituting --- adding a flavored liquid will definitely change the flavor make-up of the finished product for consuming

I did find pre-seasoned fajita beef reconstituted with beef broth instead of water has much better flavor. Otherwise a couple dissolved beef bouillon cubes in your water would probably work but a little salty.

I'm not sure but will give it a try. I did have some my my potato salad fail but I don't remember an issue with the celery. The potatoes were so wrong (baked) that I hav't tried that since. I do see that most celery sold (including the Augason Farms brand we sell) is dehydrated... Worth looking into.

Your video made me hungry. Thumbs up all round! I would definitely add more herbs if freeze drying. I would also try rehydrating using a vacuum container adding small amounts of water until moist. As for cheese maybe try a fine powdered hard dry type.

I saw a meatloaf wrapped in bacon on TV. Cooked open on a wire rack, wrapped in bacon with ground bacon and BBQ sauce in the meat.

Raw meat doesn't seem to rehydrate as well as cooked meat does. Also how would you slice it prior to freeze drying? It would never freeze dry being a whole meatloaf.

for Freeze Dryer you can't have sugar, oil like Olive Oil well you can just add little bit and some of the milk types and tomatoes they just get mushy but it still has the flavor. :)

Or add powdered cheese to get the cheese flavor. Powdered cheese is already dehydrated, so it should not prevent Freeze Dying. We use pork rinds and almond flower and coconut flower instead of bread in our meatloaf. Crush pork rinds while in a zip-lock bag, with a can and pick out the hard bits. We also do not use sugar or brown sugar, we use a mixture of Splenda, Stevie and Erythritol. We add these lightly to no sugar added Ketchup and a small amount of Molasses. This is our Amish BBQ sauce we add to the meatloaf and also add as a topping. We make our meatloaf in a pressure cooker and then transfer to air fryer for the top glaze. Just 5-6 minutes in the air fryer at 400F.

Rehydration of the dough would turn to muss. There are videos freeze drying unbaked pizza and bread dough. Add the yeast after the dough has been re-hydrated.
