Yeast fact (from a microbiologist who loves those little guys)! If yeast senses that it's in a high-sugar, high-oxygen environment, it starts making alcohol as if it were in a low-oxygen environment, even though it's a lot less efficient than actually using the oxygen. It's called the "Crabtree effect," and we think it's a way for yeast to shut out competing microorganisms by producing a toxic chemical (ethanol) if it finds itself in a really good, nutrient-rich environment. Scientists have actually been able to modify the yeast to disable that sugar sensor, and it leads to fluffier bread! (See Lee et. al., Food Microbiol. 104, 103971 (2022))

For California, please do Manzanita. It does technically grow in neighboring states but it grows largest in CA and it’s an absolutely beautiful and very hard wood. If you don’t want to hike in the woods to find some dead manzanita, there’s some decent options on my grandma’s property that you could choose from. I’d be happy to meet up and show you where to take from.

This has got to be one of the best youtube videos ive ever watched. Your chanel is amazing, how you seamlessly fit together all these interesting amazing ideas and concepts, with great videography is beyond me. Im pretty depressed and getting up is hard, so seeing you, someone who i know isnt a pro but that i have watched grow over the years makes me feel so inspired. To make bread, videos, and most of all to work with wood.

You remind me a lot of my grandfather. He had quite a few woodworking tools in his garage. He taught me to use the tools with him to make various toys and crafts when I was little. Every trip to my grandparent's house included a wood craft with Grampy. He passed a few years ago and watching these videos makes me feel like I'm a little kid again and he's showing me how to craft. Thank you

Justin, I heard about Miles’ passing a while back, and am so sorry for the loss of your friend. Thanks for making these videos. I really love the balance of education and entertainment you achieve! I lost my dog, Juniper, a couple years ago. I got a tattoo of a Juniper branch so I can carry her with me. I’ve always loved anything juniper related since I was a kid. So this juniper episode is extra special!

Amazing episode, Really amazing to see Utah Juniper wood all oiled up and ready to go. Ive never knowingly seen it, and its really nice. And tackling Utah outdoors; there are only two states that are harder to cut out with a scroll saw, Wyoming, and Colorado.

I humbly request a Rocky Mountain Maple for Colorado. It can have some incredible color variations in a single piece of wood. It also grows all around the western and intermountain states, so it should be fairly easy to get ahold of. On a side note, I'm so glad I found this channel, its fantastic and warms my heart to watch. Thank you

What an amazing tree, absolutely beautiful to hear you speak your most exciting thoughts. The Utah Juniper is such an eccentric and storied tree. Thank you for this video Justin, you inspire me to make things not for the value of the product, but for the beauty of the story. The story of the materials and then the creation. I wonder if you could make a juniper extract by soaking berries or wood in alcohol or glycerin. I imagine dripping a few drops in the dough would come out really nice.

Mesquite is a dense wood and can be a little hard to work with but I think it is a rather attractive wood and love the way it smells. Also you can make a flour from the beans. It's also hard to beat the flavor of mesquite smoke in BBQ. I'm sure there are other culinary uses for mesquite as well

If THAT was your first time ever making sourdough......🤯🤯🤯. Amazing! You don't have to discard the excess pull off the excess. Add some garlic salt and herbs to the pulled mixture. Then heat a pan and put a thin coat of oil in it and fry up that started as medallion or flat bread.

Gin is indeed made from juniper, it is the English attempt at recreating Dutch jenever, which is made from jeneverbessen (juniper berries).
