I use half self raising and half plain flour, and no kneading 😂 another tip do not twist cutter and as a guide keep the mix the same height as the cutter before cutting that way you’ll get lovely deep scones try again you’ve got this 😊love your channel Happy Christmas

Just a couple of tips, from an avid dairy free baker. Scone dough has to be very lightly handled, and also, try a block margarine like Stork block, or Morrisons baking block (like a block of butter), which ae both vegan. The oils are different in soft spreading ones, which can make a big difference when making scones or pastry. Hope you enjoyed your scones though ❤

top tip for your potatoes!!! take them out of the plastic bag and use a paper bag instead and store them in a cool place. They will last for ages!!!.potatoes have a long shelf life. lol I remember when I moved to the UK from Canada, I was amazed by all the prepackaged/multi package foods like veg and crisps there was in the supermarket lol I nearly lost it over prepackaged egg mayo !! lmao

When making scones. The less you handle the mixture the better. Kneading was absolutely the worse thing to do. You punched out all the air and made the mixture tough. That's why using a butter knife is best for mixing together. Once it's combined just tip it out of the bowl onto a floured surface then gently mold to the shape and thickness and somewhat level. Then you cut with cookie cutter I generally have mine at least 3cm tall and put into a hot oven. Another tip that I used to make mine super fluffy was the triple sieve to maximise the air in the flour and properly mix in the baking powder. I made them for my shop every Tuesday and they walked out the door. Just keep practising. You'll get there

Best and easy way. Put sr flour butter cheese salt bit of pepper and mustard either rub in or chop .mix with milk . Mix . Put small hand fulls on baking tray cook

Do not over work dough also use hard butter. You scooped your butter out. Needs to be hard to create the crumbly dough.

Scones are a quick thing to whip up. Out neighbour the farm had a long driveway legend has it she could see a car enter the drive and have the scones in the oven by the time the pulled up. I would add the cheese or raisins after rubbing in the butter but before adding the milk. Baking powder is always a heaped teaspoon unless stated. It starts acting when it gets wet. The temperature affects how much liquid the flour needs. Some days it will need more milk than others so reserve a few mls and add more if needed. Mix the milk in with a butter knife. Gently pat the scones out wth your hands on a floured surface to about 2cm thick and cut into squares with a floured butter knife. This reduces the handling of the dough. They should be cooked at 220C. Scones would be lovely thing to whip up while cruising if you have run out of bread or you have surprise guests and the biscuits have run out for the cuppa tea. It's a skill worth having in your back pocket.

Can’t believe you used a dairy cookbook recipe. That book is in my kitchen cupboard, which I bought off the milkman soon after I got married. Like you I agree Aldi have so much vegan stuff this year, just wish they would expand the range during the rest of the year. Husband is dairy free due to medical issue and it’s so hard to find him alternatives, they did vegan ice cream cones like cornettes but discontinued. Have a great day tomorrow/today with family. Xx

Along with all of the internet on the kneading thing... Cold hands to rub in fat. Cold butter/fat. Work minimally! Just enough to bring together and shape, no more!!! Its all about the gluten and the lamination. If the butter is soft, theres no laminating going on. If you work the gluten as you do for bread, then you need something else to stretch out the dough.. ie the yeast making bubbles and the longer slower bake time. Next time, try nooch, garlic powder and paprika, will give a good cheesey boost!!

You guys always have so much fun. I’m going to say something with love. As computer savvy modern children. Find a video on how to do things . Paul Hollywood has a basic how to make scones tutorial. There are lots more. Scones are a great skill to have . Especially when you have no bread in the house. Hope you have a wonderful Christmas, and a happy and healthy New Year.

Don’t knock scone dough about, just minimum handling once everything is in bowl. It’s the over handling that makes a heavy scone. I mix fluid in using a knife first. You learn by your mistakes. Better luck next time. Happy Christmas xx

Agree with the above but good effort. 💓 I would also add the grated cheese with the flour, not after the dough is formed. Another way to avoid over handling the dough. Always add the milk gradually as all flours accept liquids differently; some need more and some less. Cut them thicker too. Hope this helps. I hope you give scones another go. Another brilliant vlog again. Having just done my food shop today I was fascinated to see how you guys got on! Smashed it!! The cheese scones recipe looked great, and I was so impressed to see Amy aerated her flour by dropping it from a height, only for Wes to pound it out with the kneading. Bread yes, scones no. You'll know next time so do try them again. Love spending half an hour a day with you both, and am going to miss my daily Boat Time fix.....could you just keep going please with daily vlogs? Xx

Scone dough should be slightly sticky to touch and should be handled very lightly or they won’t rise. When you rolled them they looked more like biscuits you can just gently press the dough flat with your hand. Heather

I still have the 1977 Dairy Cookbook that my darling Mum bought from our milkman all those years ago ❤️. It’s full of great recipes. As others have said: do not knead scones. You should touch the dough as little as possible. Cold cubes of butter (or Stork margarine is excellent); lightly rub the fat into self raising flour until it resembles crumbs. Just use the tips of your cold fingers; don’t use your whole hands; you should see flour only on your fingertips and not on the palms of your hands. Just use the cutter to lightly press the shape and don’t squiggle it around. Grate the cheese into the mixture and add a little dried mustard. I have enjoyed vlogmas very much. Minimal play with the dough. It's quick and cold hands not to warm, makes them turn out hard. Do it again will get there for sure. Same thing with piklets

Put flour on the cutter next time and when u have cut them, turn them upside down. The cutter can pinch the dough so it doesn’t rise x

I was looking for some recipes to cook and found some of my late mothers cook books from about 1966, there are some recipes in there that would not look out of place these days! Your scones look better than some I have made - just less uniform in size. I always get told I have worked the flour too much. For scones the absolute minimum of working the flour is said to be the key - so that it produces a crumbly scone. If you work the flour is starts to become a pastry. My late grandmother made great scones, but never taught me - cooking was not for males in those days :(

Wes, next time Amy tries to tell you not to get too much vegan mayo when you are shopping, just remind her of the 3 jars of pickled onions that wound up in the basket 🤔🫣🤣. Cheese scones (biscuits) still looked good and edible - I'm no baker, but you over worked the dough and the butter needed to be much colder 🤷🏻♂️.

As others have said you don’t knead scone or pastry dough, you do knead bread dough to stretch the gluten. Going to miss this so much when it’s over, you two do brighten up my day 🥰

Well done Amy and Wes, you smashed the Christmas shopping trip🎉. It is hard packing everything away and utilising the fridge to get it all in. Bet those scones had a lovely cheesy taste but like others have said you manhandled the mixture too hard. Never knead it. Also put the cheese in before the liquid and cut them thicker. My nan used to put a half teaspoon of mustard powder in hers to bring out the flavour when she added the cheese. Keep trying you will make it. Rock Cakes I make yummy Makes 15. INGREDIENTS 1 1/2 cups (225g) self-raising flour 1 teaspoon baking powder 115g unsalted butter 115g sultanas 50g mixed peel 75g caster sugar Grated zest of 1 orange 2 eggs METHOD Step 1 Preheat the oven to 200°C. Step 2 Sift flour and baking powder into a large bowl, then rub in the butter until it resembles breadcrumbs. Stir in fruit, sugar and zest. Add eggs, stirring together, until you have a stiff dough. Step 3 Place walnut-sized mounds of the mixture on a greased baking tray, leaving space for spreading between each one. Bake for 15-20 minutes until golden brown. Cool on a wire rack.

Hi, try making cheese scones again but with Self raising flour or look u a vegan recipe, but don’t knead it, put the mixture on to a lightly floured surface & press out with ur hands to about 1/2 inch thick, I make them all the time & they come out lovely, good luck & merry Christmas to you both x x

Glad your all done now, me too, as of 11am today. No more shops. Yay. 😊 Little tip, You can use things like chopping boards that are the right thickness as a guide when rolling out dough, so the doughs the correct size. When cutting Scone dough though, you need a round cutter, no frilled edges, as the frill seals the dough, & stops it from rising up to Scone height. Great Vlogmas, very busy.
