Looks phenomenal! Gonna be doing smoked beef cheek tacos this weekend with salsa macha and an avocado crema / tomatillo salsa / mozzarella so not a million miles away when it comes to flavour profile. That bone marrow broth though... gonna have to give this a try!

Looks awesome, man. I love your dedication to BBQ/Mexican/Tex-Mex despite being thousands of miles away!

Great looking Cook. My Wife worked in the restaurant industry for years. At her last employment before she passed she was given two titles. One was The Dessert Queen. That was her forte. All home made. Second was the Queen of Quesadilla's. I am not getting into the pizza dishes she created but two are still on the menu at the restaurant. One of My Favorite is what is named a Spudza Pizza. She would take left overs at shifts end or during a shift and create these mouth watering creations to feed the crew after a long evening of hard work in the kitchen. I some times got lucky to have some make it home and beg to have her make it again at home.

Fun to learn about the challenges of doing certain styles of food over the pond where it might not be as common or getting ingredients is challenging.

A new Mexican restaurant in town actually has a birria pizza! Its a standard pizza crust with a really reduced down consommé for the sauce and then the shredded birria meat, cheese, and topped with cilantro and onions... its FREAKING DELICIOUS!! Great video as always!

Yeah that sounds perfect. I’ve actually just got my pizza oven out of storage…

Hey mate, Great video wanna try make this but taco’s probably, if you could help with where you sourced the shin from? Thanks for the heads up on the cheese I’ve been looking for so long 👍
@WilsonsBBQ7 ай бұрын
Thank’s! The shin was from a local butcher. If you Google beef shin or osso buco - you’ll probably find it at specialty butchers online for delivery

Looks lovely - didnt realise white onion was different to our brown - are they available in the UK - saw them in Walmart last week and was surprised that they were white on the outside
@WilsonsBBQ7 ай бұрын
Yeah! You can buy them from ocado, and probably other places online if you Google it under shopping

@@WilsonsBBQ great - thank you - i shall take a look - always used brown onions in US recipes assuming they were white 😁

So the way you've made your Birria is the exact way I make Texas Chili (Bowl of Red).....except I use beef broth instead of water, and chuck roast in place from the shin.
@RuffNRuffer7 ай бұрын
Which butcher did you get these beef shins from please? Davidson's?
@WilsonsBBQ7 ай бұрын
These were from my local butcher.

Can you recommend somewhere to buy the dried chillis in the UK? Love the content 👍🏻
@WilsonsBBQ7 ай бұрын
For sure! Amazon is always good, as they will stock bundles. But, to save money and support smaller business; check out mexgrocer and mextrade - you’ll find them both on Google

When you come to Texas, where do you visit?
@WilsonsBBQ7 ай бұрын
I stay in Austin, travel around up to Dallas. Houston, etc or wherever my plans take me!
@armandoperez40297 ай бұрын
That's awesome! Everyone that makes BBQ or even enjoys BBQ usually makes the trek to Austin straight to Franklins. I'm looking to build up a menu to do a pop up like you do. Thanks for your content! It really has helped my BBQ game
