This is a great video. I've used royal icing in the past but I definitely learned some helpful hints. I ruined my hand mixer with royal icing! I hadn't even mixed it very long. Now I have a kitchenaid mixer so I hope to have better luck

I tried this last year for Christmas cookie decorating. The icing came out like in the video. I added a bit more water to get a thinner icing for flooding the cookies. The meringue powder works wonderfully. The taste is a bit different with meringue powder than with a regular buttercream frosting, but as a cookie decorating it worked perfectly. I would not recommend frosting a cake with it, though. Buttercream works better for that.

Do you think there is a difference in powdered sugar for consistency in making roses? I’ve always used C&H sugar. I tried Bakers sugar from Aldi’s and it didn’t work well for making flowers. You did a great job in demonstrating this video! Thanks! I always sift the meringue powder and powdered sugar before making flowers with the small tips though.

Hi! We have not tested the difference in performance between brands of powdered sugar, so unfortunately, we can’t comment on which one performs better. Extra powdered sugar is added to icing to make it a bit more “dry”. However, powdered sugar is very sensitive to moisture and humidity. If your bag of leftover powdered sugar was not tightly sealed or if you have a humid kitchen, it will absorb moisture in the air, adding a little extra moisture to your icing. This extra bit might be what’s slowing down your icing from achieving stiff consistency. Thanks for watching and don't forget to subscribe to our channel!

Mir Nasim Tabassum on the can it says 2tsp meringue powder + 2 Tbsp water = 1 egg. So it looks like she used an equivalent of about 4 eggs whites. You want to beat them till foamy before adding any sugar.

I just tried this recipe for sugar cookies, it's on the back of wiltons meringue powder. I had to add 2 to 3 more tablespoons of water to get it to even come out of my piping tip! Not to mention I tried to use red and black wiltons gel food color and it turned pink and grey. This is about the 10th time I've been let down by wiltons, do not recommend this for cookies at least.

You can’t turn white icing into black or red immediately. You must turn the color slowly to achieve the color you want. If you want red, add a drop of Chocolate Brown or Warm Brown to your icing, it will turn it into a nice deep red that would be a perfect shade for any Santa costume. If you want black, start with a light purple color then add black.

While we do not have one, there are recipes out there where you can use real egg whites to make Royal Icing, but it does cause some slight risk of salmonella since they would not be pasteurized like Meringue Powder.
