I have watched many (too numerous to count) videos on cake/cookie decorating tips. I began this journey 7 to 8 years ago when my first grandchild was born. I had never attempted to decorate a birthday cake that was more challenging than just spreading some icing on the cake. I began searching for tips and teaching videos on you tube. After watching countless channels and videos i found yours...and i was amazed. You are blessed with the ability to teach and explain. After watching this video class...I was able to make a rose - on the very attempt!!! you were born to teach. I loved the idea of using double bags. It seems so much easier than using couplers. And it lets you adapt from smaller tips to larger tips without needing to fill a new bag to accommodate a larger coupler. I used to decorate cakes many years ago when my daughter was little- back before the internet. I took a cake decorating class then and your excellent tutorials have helped me remember some of the techniques I learned back then as well as more modern approaches to decorating cakes and cookies. My favorite thing about it was that you showed the different types of flower tips, compared them against each other, and then showed what the flowers and leaves would look like if you used the tips in different ways! @@LittleCookieCo Oh, by the way...my mother did this back when she had to fold parchment paper bags, cut the tip, and slide your tip inside. I can remember before a large wedding cake, her sitting up and folding her parchment bags, and prepare everything for the upcoming creation! Our huge dining room table was where this all took place until it was delivered by her and my dad! The stress for EVERYONE in our home did not end until that cake was gone and mother walked in the backdoor, sighing a big sigh of relief! So sorry to carry on and on!

You need to adjust your consistency (somewhere between stiff and medium) just a little and the rosettes would work better.

I would worry about the bite. With small flowers I expect them to be hard like the little royal roses we'd sneak off cakes as kids, but the big rosettes might be too hard. They are gorgeous though. I'm looking forward to trying her recipe with the corn syrup and see if that helps

@@JacindaH If you add corn syrup or glycerin to the royal icing, the icing will still dry but you will get a softer bite. Back in the day, royal icers used to add glycerin which I assume was more readily available than cornstarch.

@@msg4141 normally I just whip mine for a full ten minutes and really put that meringue powder to use. The problem with this is that my icing will deflate if I don't use it immediately. It's great for all day baking, but if you use it more than a day or so you have to rewhip and rebag it.

You should use a coupler instead of doubling the piping bags that you are using.

The coupler is most useful if you want to use different tips with one bag of icing. Using double bags like this gives more control of the icing flow and you can save any unused icing-not royal, as it will harden-very easily.

I am a henna/mehindi artist and I feel like decorating cookies is very similar.I love doing filigree as well as flowers...I have a way to go practicing with the tips..I pulled my tips out and following along.I had no idea what that rounded petal tip was for .I got a decorating set that just had different tips.This was very informative!

Wonderful explanation on how to make icing thick enough to hold it's shape when making flowers. Thank you for that!!! I also liked the parts of the video when you showed which end of the flower tips go up, and which end go's down. Thank you for that!!!

You sound quite young but You certainly have a LOT of knowledge when it comes to this! Very nice and informative video. I was raised by a mother who ran a bakery from our home...mainly weddings and larger cakes. As children, we ALWAYS knew to never "run" through the house, should mother have cakes in the oven! Your roses are very, very much like hers (each baker has their own unique look, don't they?) which I always thought were so beautiful! You brought back some real memories for me. Did you learn the double bag trick from school or did you come up with that on your own? I had never seen that but it is an awesome idea! You are so calm and do not rush...you would be a great teacher! I really, really enjoyed this. Thank you so much for spreading and sharing your passion with us! I loved it, God bless you on your journey...

Wow, thank you so much 🥰 it must have been so fun to grow up watching your mom make amazing cakes! And I remember my neighbor told me once about the no running in the kitchen when a cake is in the oven hehe. When I do cakes, I try to keep my little ones from running too, just in case! And thank you, thats such a compliment about my roses!! To be honest, I don't know about the double bag, I'm not sure if I saw it somewhere or I saw people putting saran wrap around buttercream then bagging if it hit me. I always hated trying to fish the couplers out of the pastry bags (it was such a mess) it just seemed so much easier this way! I never went to school for baking, mostly self taught and seeing things online. I come from a family of amazing bakers, but they don't do the fancy decorations, just amazing tasting desserts. I always loved baking and decorating so I did what I could with what I had growing up to practice! And its funny because I always wanted to be an elementary school teacher but life took me in a different direction so this makes me feel like I'm making a bit of a difference somehow. And its only a side gig for now, not sure if it will grow into something more and I could make it my real job to teach but ill always keep that door open 🥰 thank you for your comment I really appreciate it!!
