At 7.53 you say you have about 82 -83 lbs for the 55 gal.., and that you like about 15 lbs per 5 gal of liquid ( 8:23). I also use 15 lbs of fruit per 5 gal. of water. Doing the math, you should have used 165 lbs of rhubarb. How did it work out?

It checks out when you use the volume of the final product (30-35 gallons), rather than the primary fermentation volume.

i made my wine about 48 hours ago, and have stirred it twice and it foams but there are no air bubbles in the air lock

I don't know what you are using for the primary fermenter but, you may check for a leak at the lid of your primary fermenter and make sure you have the water in your air lock at the right level. you should have fermentation going at 48 hrs unless you have it in a very cool area. More than likely you have a air leak in the system. Hope this will help.

as long as it is fermenting it is fine, if it has produced enough alcohol it will be ok.

how long do u leave the fruit in the barrel

I leave the fruit in the barrel for about 4 to 8 weeks, but it really depends on the yeast and how fast it is working. I like to leave the fruit in the primary fermentation barrel as long as I can. As long as fermentation is working. your good, however, you do want to rack it before the fermentation is complete. Keep an eye on it, when fermentation is barely bubbling, before it stops...then you want to go ahead and rack it.

I really tried to watch your video. No good. You need a microphone closer to your mouth, because no matter how high I turned the volume, I am only hearing every few words as you move in and away from the camera. Thanks for trying though
