there is so much advantage in the surprise attack, that it is hard to say. Instinctive avoidance of dangerous situations would be the best advice. But as you said , its unexpected , so your reflex is key , there is no way to predict the outcome, but your trained reaction will always be better then an un-trained person. Wing Chun is for close , hand to hand combat, so the distance matters as well.

Yeah it's beyond terrible - a blurry mess, no grounded posture, no body movement behind the techniques, the basic shapes (Fouk Sao, Tan Sao and Bong Sao are not good. Also silly made up costume with "Grandmaster" on the back of his Tee-Shirt. McDojo bs. Watch closely and notice how his Jut Sao slips of the arms, how his knee never makes contact with the Dummies Knee, or how his effing *fingers* hit the dummy with Fak Sao. Run far, run fast.
