BLTs & Breakfast Enchiladas | Cooking Evening to Morning in a Country Kitchen
Breakfast Enchiladas
Enchilada Sauce:
2 Tablespoons salted butter
1 Tablespoon all-purpose flour
1/2 teaspoon ground cumin
1 cup milk
3 ounces cream cheese
1/3 cup salsa
1 cup shredded cheddar cheese
FILLING
5 large eggs, beaten
1 pound sausage, cooked & crumbled
1/2 cup shredded cheddar cheese
8 medium flour tortillas
Instructions
Preheat oven to 350 degrees F. Spray a 9×13-inch baking dish with non-stick spray. Set aside.
Start with Enchilada Sauce.
In a medium saucepan, over medium heat, melt butter. Whisk in flour to melted butter and stir until flour turns golden-brown; about 30 seconds.
Add ground cumin and then slowly pour in milk while whisking to combine everything together. Bring to a boil. Once it starts to boil, reduce heat to medium-low.
Add cream cheese and continue to stir until cream cheese is melted. Stir in salsa and cheddar cheese. Remove pan from heat and continue to stir until cheese is all melted and mixture is smooth. Set aside.
FOR THE FILLING: In a large non-stick skillet, over medium-high heat, cook the sausage until done.
Add the eggs and scramble together with the sausage.
Place tortillas on a clean work surface. Divide scrambled eggs & sausage mixture between the 8 tortillas.
Sprinkle one Tablespoon of cheddar cheese and one Tablespoon of enchilada-salsa over the eggs and meat. Roll up each tortilla as tight as you can, then place in prepared baking dish.
Pour the remaining enchilada-salsa evenly over the enchiladas. Then sprinkle the remaining cup of cheddar cheese evenly over all the enchiladas.
Bake, uncovered, in preheated oven for 20 minutes, or until cheese is all melted and bubbly. Let stand about 5 to 10 minutes to cool slightly before serving.

Just be thankful you don’t have winter weather. We are near zero here in Michigan and many other places are much colder. On Friday we had heavy, wet snow that turned to rain that turned to ice overnight. No fun and very dangerous. Our cars froze and sidewalks are a mess. Watching it on tv is best.

We have snow and the temps, since Sunday, have been in the teens and at night in the single digits. The wind chill has been as low as -5 degrees. We have been luckier than our son who lives in Wisconsin. They have more snow than else and a lot colder. I think I will stay here in Ohio. I'm in Wisconsin and we've got more than enough snow and winter scenes for you. We had TWO snowstorms last week, with the second dumping nearly a foot of snow. And then we fell into arctic blast temps below zero, where we'll stay most of this week. It's currently -10 real (-27 wind chill).
